I used to work at a butcher shop and they way they achieved perfect cut korean short ribs was to semi-freeze the plate of beef and then they would slice it down. Semi-freezing it helps to create a clean and flawless cut.

I live in South Africa and lucky for us, short ribs are actually extremely cheap! In fact, they are the cheapest cut of beef you'll find anywhere. 😊When I first started carnivore woe, all I could afford was short ribs as I wasn't working and I actually felt pretty great after just a few days on the diet. I would get full quickly cause they're so fatty and lost a lot of weight in a short amount of time. But then I lost my way and when I tried carnivore again, I forgot about short ribs and bought other cuts of meat. But in SA, meat is ridiculously expensive and the diet soon proved unsustainable for me cause I just couldn't afford to eat meat all day every day. Thank u for reminding me about this humble staple that served me so well when I first started carnivore 🙏 I'm going to try carnivore again but this time I'll only be eating short ribs and I know I will come back with a great testimony soon.

I had flanken short ribs for the first time last summer while visiting PNW. I was in Heaven! Before leaving I bought plenty to bring home and started experimenting with cooking methods. I did complicated marinades, BBQ , Sous Vide and a failed attempt at baking that resulted in almost jerkey. I was about ready to give up when I found this video. Absolutely incredible! I’m so confused on how to cook this meat. Some say low and slow-3 hours, some say quick, less that 5 minutes. I think I’ll oven cook till I smell them.

You can cook it low and slow if you want, we have done it in the instant pot too :) this cut is versatile so you can experiment with different methods to see what you like the best :)

For the longest time our stores only sold the traditional cut for short ribs which made it a PAIN to do the “zig zag” style cut which made it thin and long, but they’ve recently started cutting it flanken style! I’m so happy I get to enjoy them without having to go out to a restaurant. 😊

In Hawaii we call it Kalbi... i just purchased 10lbs because Safeway hac them on sale for $5 a pound. You can't even find the traditional style short rib here. Ive beem on carnivore for 3weeks & wanted to find recipes or techniques that weren't marinateed in the traditional Korean way... Thanks for the video...

I like flanken short ribs more than ribeye. I think they're perfect. Great fat to protein ratio then you get that little bit of cartilage around the bone

Here in Atlanta, got them 9.99 lb at farmers mkt, certified Angus beef. I want to research some butchers around to see what I can find lower price. I do like quality however.

That's what I do! I never throw away bones. I keep a bag of bone in my freezer and when I have enough, I make broth

I had 1/4 inch flanken ribs. 400 degrees for 13 minutes then 2 minutes broil. They were pink inside but not tender. Im disappointed. How can I cook them and get them more tender.

Hey Christine, if you want them more tender you might need to consider a slower cooking method. I have seen others use the instant pot for their flanken ribs :)
