I shred it, put it in my freezer, and throw it away next year.

@@vintagerecipehero The idea was to save it for turkey tetrazzini. I just am not good about using things once they’re in the freezer. I do actually use some fresh, mostly for sandwiches. A good way to use it is to make like a turkey salad, with mayo and whatever else you like such as celery, spices. Then roll out a large sheet of crescent roll dough. Put the turkey salad down the center, and fold it up like a large package. Seem side down, and make slits on the top. Brush the top with an egg wash. Bake in oven.

Marguerite Patton is great! I have one of her wartime ration cookbooks. I'll have to try these croquettes with leftover chicken, which I always have on hand. Thanks for sharing the recipe!

Well Thanksgiving is around the corner here in Canada. Guess what recipe I will be using for leftovers. It's easy, looks yummy and this senior like simple. I'm subscribing to see what else you have up your sleeve.
