Five was probably the sweetest of his incarnations, but the universe tended to pay that back with cruelty. As a result, Six and Seven were not forgiving and pretty vicious. Eight tried to be the nice guy again, but then...well, Time War. So we get War and Nine. Ten tried to be as nice as Five, but remembered a little too well how the universe repaid kindness, so became someone who was nice enough on the surface, but had the universe's biggest mean streak when crossed.

Twelve is salty on the outside, sweet on the inside. It shows mostly when he was dealing with Clara and River. I'm thinking "Face the Raven" - If "Mayor Me" were dealing with Seven and Ace? Yeah, Mayor Me would have been TOAST. Seven might promise to Ace not to do anything stupid, but if Ace got killed? Yeah, Seven would remind Lady Mayor that his promise was only good as long as the person he made it to were alive, and then "Me" would be absolutely SCREWED. Ten might list off a token "I'm so sorry" before trashing the place. Six would probably incinerate the whole street before it even got to that point. And while he was incredibly snarky to River? Well, after she proved just how much she takes after her dad, he did set it up so they had nearly a quarter-century to themselves before the inevitable.

I have a theory that since Time Lords can subliminally influence their regenerations (like Capaldi), poor 5 got screwed so much by his kindness that he thought "Hm... who's the biggest dick I can think of? Oh yeah, that asshole who shot me!" and regenerated into him.

Aw, Five, he was my favorite. Yes, he was gentle, kind, dashing, sweet, and very curious. He was the most sane and the most vulnerable and the most courageous, which made the Hero Doctor. Say what you will about the bad asses, like three, nine and thirteen. But it takes real courage when your actually afraid.
