I live in Portland, and have been to Hubers many times. I'd recommended one little trick they do, which is to rim both the outside and the inside of the glass with sugar. That way, the carmelized sugar runs down into the drink and you get a nice little kick of it every sip. It's deeeelicious!

I have had these at Hubers in Portland and they make them tableside and usually have a dedicated server just for this purpose. Believe me, the guy as always running, even lunchtime during the week. Hubers itself is an amazing restaurant and cannot say enough good about it. Great food, great service, great ambiance.

Yeah, as someone else mentioned, they make great versions of this, Sexy Mexican, in Mexico. Tequila, Grand Marnier, Kahlua, coffee, ice cream, cherry garnish. The liquor is lit, poured between 2 tin gravy boats a foot or so apart in the air, then down into your coffee glass. The tins are warmed over hot flame before adding the liquors. It's quite the spectacle to see. I've had these many times over coastal Mexico, Caribbean and Pacific sides, including the Baja. Anders, you need a trip to Mexico :-)

The Vintage Press Restaurant in Visalia, CA used to do a similar cocktail, swapping out the rum for Galliano liqueur, and serving it in a long-stemmed burgundy wine glass. They called it The Flaming Press. It’s been close to 40 years since I’ve had that cocktail, yet I still remember it vividly.

In the mid 90s I encountered something similar in Cabo San Lucas. They did it with 2 metal tins with handles. Pouring the rum back and forth while burning and the lights in the place down low so you could see the blue flame spiral around the poured booze. I also recall that they would bring out shaker of cinnamon and shake it over the still burning booze. The powder would burn off in a shower of sparks adding to the show. After the fire was out they would add back some rum and the Kahlua, They usually finished with vanilla ice cream and coffee. Less of a refined drink but an amazing show.

At Huber's and most places in Portland, they also grate some nutmeg over the open flame to send little sparks everywhere, which is pretty fun.

Most likely came from Baja, the whole flair thing in food is done a lot in los cabos, tijuana and ensenada, the cesar salad as well it was exciting because it was made with some flair table side, the cocktails as well and the carajillo what made it different from the Spanish one was pretty much using fire as flair and mexican kahlua instead of other coffee liqueurs from Europe.

I had my first Spanish Coffee at The Doctor's Office in Seattle (great bar!) - they make the whole thing into a spectacle with lights lowered in the bar and a soundtrack with choreographed flourishes and extra flame moments (with a cinnamon shaker). One of my favorite cocktail moments and a delicious beverage to go with the show!

I just watched the bartender make one of these in Huber’s about 45 minutes ago. They didn’t sugar the rim and were very flamboyant with the pours into the glass. Was mostly show but the patrons really enjoyed them from what I saw

Yessss! I had this here in STL at a fancy restaurant. Had no idea what it was at that point. Once I had it I was obsessed. I featured it this year on my 25 cocktails of Christmas. It also translates great into an espresso martini.

Random baking note: you can caramelize sugar in the oven in advance to make this drink a little more efficiently and safely. Spread sugar onto a baking pan and bake at 325 for around 2 hours until the color of dark sand, stirring every 30 minutes or so.

My problem is that I live in Hooterville. What that means is premixed margaritas, lots of beer on tap, and a lot of low and bourbon and tequila on the bars around here. I’m pretty sure if I were to go order this at one of those establishments, their head would explode.I’m glad I found your channel channel. Having just dug out from the storm in Nova Scotia, I’d really like to try this one (our usual is Irish coffee), but I have two questions… 1) how can you be sure your glass won’t shatter when it’s on fire for that long, and 2) must the rum be overproof to burn? Hi Anders, I was at the liquor store looking for a good coffee liqueur over the Christmas holiday, and never have been real happy with Kahlua at all, and whoomp there it was…GRIND Espresso liqueur, says it was created by bartenders, so we tried it. Dude, if you haven’t tried it you really should! We’ve tried 3 flavors (don’t know if there are others); Mocha flavored is good, the Regular Espresso is better, and the Caramel flavored is my favorite. No joke, GRIND is the bomb!!!

Almost like a Greenlandic coffee (like Irish coffee). If I remember correctly you mix the whiskey and Kahlua, heat it until it can hold a flame. Then pour in the hot coffee. Add lightly whipped cream on top. And last but not least light up the Grand Marnier in a spoon and pour over the whipped cream (looks a bit like the northern lights or that's the idea anyway). Supposedly it's from a hotel in Nuuk. Hope you try it.

Not sure if you're a fan, btu we've always eschewed the regular Kaluah because it's overly sweet. Instead, we've gotten the Kaluah Especial, which is more intense coffee flavor, higher proof, and far less sugary. That said, there are a number of less sweet coffee liqueurs out there! I do like the idea of a spiked coffee and this one has real interest, though seems to be far more work than others.

Little unfortunate that the Hubers version is really only okay, but regardless, the presentation is fun and even a mediocre Spanish coffee is still an EXCELLENT cocktail! Also, when making at home, I highly recommend Goslings Black Seal overproof. I find that it complements the coffee very nicely.
