Ed saw Envy back in the fifth laboratory, after Envy and Lust killed the Slicer brothers (the other armor guy with the sword) and knocked Ed unconcious before destroying the building and delivering Ed to Alphonse, Denny and Maria. Ed saw Envy, but did not see Envy transform. He did however see Lust use her finger spears, which was used to kill the first Slicer brother (the one in the helmet).
