@@ryanjohnson4565This is not correct. Spent years as a garde manger. Sometimes they core the onion for appearance or consistency purposes while processing, but 99% of the time only the ends and skin are discarded. They are most likely using a sweet onion here, so the core is fine. It also looks like they cut off both ends before they put it on the slicer. They are doing this for presentation only and the cook or wait staff could eat it. However, my chefs would always instruct the entire staff to not eat scraps. We would just make them something instead.

The thing about these onions that I find disappointing is that they are never quite cooked enough from the quick deep fry I think it’s better to thoroughly sauté onions, then dredge them in buttermilk and flour and fry them because it really brings out the taste the sweetness the richness so you’re not just biting into fried breading and raw bitter onion

I made this dish along with other foods for a party we were hosting. My husband was initially unsure about it as it involved onions, but he eventually gave in and was pleasantly surprised by this experiment. When the guests arrived, everyone had one or two whole onions to themselves. I didn't hear too many comments, so I assumed that people were enjoying the dish as it was disappearing fast. A few days later, my husband's friends came back to tell him how much they enjoyed the the party and mentioned how great the onions were. They just couldn't stop munching and let’s just say, it led to them blooming as well.

From Georgia and I’ve always heard them called bloomin onions. Also taking the middle out is criminal and unnecessary when you can just get sauce cups.
