Correct me if I'm wrong, but I thought you only get Heroic Victory if the probability before the battle was that you would lose but pull off a decisive victory anyways. afaik if it is evenly matched or you are predicted to win, you can't get heroic.

I used to get pretty consistent complete envelopments in the RTW1 days. It wasn't too difficult because most players spread wide in attempt to just wrap around you. Position toward the flank of attack, Infantry in three lines echeloned away from the enemy, cavalry all on the attack flank in two lines echeloned away. I preferred to attack from the right toward the enemy's left, because most people are right handed, they will be less conservative when faced with a threat from the left, and more aggressive on their right. First line of infantry does not initiate contact, but takes up a 45 degree position facing the center of the field, while the second line rushes the enemy flank and the third line veers away past the enemy on the flank. This helps conceal the intent of the attack, because it looks like you're trying to punch through with everything, but you're actually spreading the battlespace everywhere but the initial points of contact. If the opponent tries to retaliate by simply repositioning the troops on their extreme flank further out or swinging their whole right forward, their troops in initial contact will become even more outnumbered. If they respond by swinging their entire line away from the line of attack their right is now the exposed flank, and the left is too far away to support them since you're less spread out. First line of cav pins the enemy flank cav, second line breaks away before the charge and pincers enemy cav, freeing all cav either to rush behind the enemy line to annihilated the remaining cav if the opponent has kept them in reserve, pincer them against the blocking force if they responded with their own flanking cav attack on your left, or simply threaten the rear to bait them in. About this time, the third line is already enveloping the enemy flank. If the enemy has stacked their cav on your line of attack, the third line of infantry are already in close support and that saves you the trouble of chasing down the remaining enemy cavalry. If the enemy stacks their cav on your left, third line just turns to form a blocking force behind the first line while your cav pincers together with the second line. You've now crossed a T, and have cavalry superiority. If the enemy brought a lot of archers, it's a rofl stomp, if not, they will be encircled as they try to form a new line. If they sacrifice part of their force to form a new line, continue the attack on both flanks, it just makes center of their line idle. I liked this style of play because it punished cheesing Total War's fast pace of combat. Can't outmicro when micro is thrown out the window. Can't sneak a sneaky boy cav at me when cav is over in the first two minutes. The only response is to play deep and maneuver. One guy tried chariot spamming me on rematch with hilarious results. I put everyone in loose formation and as soon as the chariots rolled over the first line, put everyone back into regular formation and all the chariots were trapped inside three lines of infantry.
