Spike's Breezeway Cocktail Hour

Жыл бұрын

In the 100+ videos that I've made about vintage tiki cocktails, there have been a few that have left me scratching my head. This recipe is by far the king of the bizarre. I dare you to make this along with the video.
In this episode, I also tell the legend of the mighty Kahiki in Columbus, Ohio. Some of these midcentury tiki palaces were just above and beyond the rest and the Kahiki is certainly one of those.
I hope you dig the show. Aloha!
To make the the drink in the video you will need:
--------------------------------------
1/2 oz fresh squeezed lime juice
1/2 oz fresh squeezed lemon juice
1 oz fresh squeezed orange juice
1/2 oz papaya juice
1 1/2 oz coconut milk
1 1/2 oz Lemonhart 151
2 oz spiced rum
2oz lager beer
--------------------------------------
Shake and pour into a Kahiki Headhunter mug.
Garnish with pineapple cube skewered to a maraschino cherry
--------------------------------------

Let’s flashback about 40 years to any given Sunday. It’s wintertime in cold bleak Ohio and my dad is driving us 50 miles to the west, as we did every Sunday for as long as I can remember, to spend the evening at the Kahiki. It was one of those family traditions that you loved at the time, but you didn’t realize how impactful those nights out with the family were. I think my dad was secretly looking for celebrities. Every Sunday, like clockwork, we would cross the little river at the entrance of the Kahiki and be transported to another place. The smell of the food, the fiery drinks, the rain wall, the aquariums, the massive Moai fireplace, and the mystery girl 😍. It never got old, and the entire family got to pause life for a bit and share some pu-pu’s.

When I was a kid my family would go to Kahiki at least once a week. My grandfather made sure we sat at the table in front of that moai fireplace. That moai always freaked me out staring down at me. To this day, I vividly remember how incredibly themed that place was.

Grew up at the Kahiki. My Mom would sing there on the weekends, I was able to feed the fish, play behind the bar and run around down stairs. We celebrated birthdays and ate at the Sunday brunch all the time. Definitely sad it’s gone.

As a sailor in the Pacific, trips to tropical paradise were SOP. Whether it was Oahu, Guam, Singapore, The Philippines, or elsewhere, I went to many. I can't tell you how great some of the old bars were before modernization ruined them. But I bring that up because of the drink glasses and mugs that were so prominently featured on Tiki bar menus. As a sailor, there was no way I was getting a drink served in a coconut shell with a flower in it. They seemed like such a tourist thing to order, and the furthest thing from my desire. But I did like rum (of course - sailor), and the Mai Tai was a go to for my first drink. Though after that it was beer, as sailors don't have much money. Now I sort of wish I had ordered the drinks and bought the mugs from all those places which have been swallowed up by the modern world. Imagine the collection I could have!

We've been collecting Kahiki food & drink recipes for years -- ever since we first walked the bridge into the place. Some of them are real zingers, and all of them have some kind of "special" ingredient like this one.

Oh Kahiki, how we central Ohioans miss it! It was closed in 2000 so the frozen foods side of the business could be concentrated on, and a Walgreens could be built on the site (which itself has recently closed IIRC). Plans were to reopen the Kahiki in some fashion, but they never came to fruition. Great vid and tribute to the old bygone girl! Another Kahiki drink that makes me scratch my head is the Polynesian Spell.

Cleveland had the Kon Tiki (before my time) and my understanding is that much of their glassware is now at the tiki bar Porco in Cleveland. It is nice enough, but I have to say that the best tiki bar I have been to is Psycho Suzi’s in Minneapolis. Large bar, great decor for inside seating, large outside patio with tiki hut seating next to the river. It’s a pretty big place. They have a great neon sign over the bar that says “Mender of Broken Dreams”. That is a very cool place and a must-visit anytime we’re up there.

This is one of your most entertaining videos. If I was playing around with this recipe, I'd start out by eliminating the beer and the lemon juice. Papaya juice would be next on the hit list, and coconut milk after that (maybe replace with a smaller amount of cream of coconut?)

We saw the Erie Kai in the first weeks it opened, and everything about it was incredible ... except for the country music, the bright lighting, and the Budweiser menu. There's too little tiki in that lovely bit of Ohio's Vacationland, and the Erie Kai gave us hope ... since even most of the fantastic nautical places on the lake have long shuttered. But alas, the people there seem to want it to be a biker bar. They took the sign down recently and renamed it, so we're not sure how much 'tiki' is left inside...

It's a novelty drink and some menus need those drinks. It's a head scratcher that grows on you it's a pillar of a complete menu. Thanks for the killer vid spike. I wouldn't choose kraken but kraken is way over vanilla in my book(and tons of sugar that's given me one of the worst hangovers ever) but who cares if what you like is in the drink, it's correct.

Coors isn’t a real lager. It’s watered down American mass market beer. The cocktail drink is like my attempt at being a bartender. Usually a massive mistake. The only time I gotten plastered at Hawaii is at Germain’s luau. I never gotten into tiki bars, but I can appreciate the effort, which is overwhelming. The decor is over the top. I went to a tiki bar just outside Honolulu International Airport a few decades ago. Pretty interesting.

I saw this recipe on their Facebook page while looking for Kahiki Cocktails, and I have my doubts about it being legitimate. It matches up perfectly with a generic "Headhunter" recipe I saw elsewhere online, and having asked their Facebook and Instagram if they still had access to their cocktail recipes, they told me that they did not. There's a ramen place in Columbus that's owned by the son of the Kahiki's final owner, and they're currently serving the Kahiki Mai Tai. Knowing that, I assume that the recipes stayed in the family, and the cocktails shared on their Facebook were pulled from the web and not the archives.
