I found Sue Becker on youtube about a year ago. I ordered my mill and whole grains and began making my own bread. I m 70 years old with a multitude of health issues, and I found relief. I recently had a test to see if my heart was becoming clogged, as my cholesterol is off the roof. My doctor was amazed that I had practically no blockages at all. I attribute it to the bread.

I’m a Georgia local and happened to go into her store to purchase wheat berries and lo and behold there she was talking to the cashier that was checking me out and all of a sudden started talking to me too, she really is a sweet person in real life just very talkative and friendly personality!

I am so glad that you have provided this podcast with Sue Becker. I have been gluten free for nearly 20 years now. Gluten consumption puts me down for a week. Immediately my pain is excruciating. Last year I was experimenting with milling my own red berry wheat bread and it was ok but it was a lot of work and took way too much time! I easily went back to purchasing gf flour for my baking needs. I miss making sour dough bread from my pre gf diet began. The red berry bread was easy on my digestive track but still did not bring me the happy pleasant feeling I got when my old bread came out perfect-I missed that! Recently I ordered a few other flours sorghum and millet to try that blend. This podcast has confirmed what God has been whispering to me that it is not gluten but the altered flour on the market! This is confirmation what He has been whispering to me! Again, thank you for this podcast! I can almost feel my spirit feeling lifted and being hopeful I will once again obtain the opportunity to enjoy bread making and eating it myself, and being able to share my baking with others again!

Here is my Bread Beckers story😂 I am in the Atlanta area, so Im local to her store. I purchased a grain mill in 2020 and preceded to never use it for 2 years. I did not know what to do, all the videos I saw seemed so complicated. So I just didn't do anything. I thought if my husband knew what this mill cost😂 and me not using it. My friend at church told me about Bread Beckers. I had not heard of Bread Beckers before. I call myself real food savy, so I was surprised to here of a real food store, I hadn't heard of. I went to the store, I purchased here red reecipe book, different grains to make a mix, bread making supplies, and a bread maker. They were so helpful at the store. I used her basic bread recipe, and I have been making freshly milled bread ever since.

I started milling my own wheat after hours of Sue Becker YT classes. We make pizza usually once a week, but last night my husband was given a gift card to a local pizza place, so I brought it home. 4 of our 5 kids had digestive issues last night, having to immediately leave the table. We’ve been milling whole grains and making most of our bread products for almost a decade and I remember at the beginning we made some cinnamon rolls for someone and they took one bite and was instantly disgusted and said “is that whole wheat?!?” Bahaha. I love the taste. And it makes me feel full.

I was gluten free for four years before finding Sue and my life has been completely changed since milling my own flour! I have Graves’ disease and my thyroid is functioning normally without medication! I can eat tomatoes and dairy and beans no problem! I have been watching some of these anti grain doctors for almost a year now and I always keep going back to the bible…. My HEART says “the closer to the way God made it the better it is for us.” Then add the season you harvest it and find it as close to home as possible. But until this interview I didn’t think I could have bread AND a healthy lifestyle. You even explained GMO vs hybridized… THANK YOU for that! I miss bread so much…. Well not any more. My kids and I have been studying the 1800’s for two years now as our history course and I’ve been wondering what happened when people went to literally living on just bread to not, apparently, been able to eat it at all today. This makes a lot of sense. I still want to keep making sourdough and soaking/sprouting/fermenting grains and beans.

For people looking for sources for various varieties of wheat berries, I have had really good results from Azure ( they are currently out of organic hard white wheat berries and flour), Amazon, and Granite Mill farms for organic Spelt, Kamut, Hard red and white wheat berries, soft White Wheat berries (for biscuits, quick breads, etc. or to use in gravies and breading meats), Sprouted Red Fife, and Einkorn. I always purchase only organic and have always received clean and delicious grains from these companies. By the way, whole wheat berries of any type make a fantastic substitute for rice and cook quickly in an Instant Pot.

Wow… this was so informative. I switched from store breads to sourdough for my family’s health and have seen an improvement. I purchased a mill several months ago and grains from Azure to take it to the next level but have been scared to mess up measurements and how fine to mill it, etc. This has greatly encouraged me to take the next step…. Joel Salatin talks about how the hybridization of wheat causing the stalks to be shorter thus Maximizing the grain size has made the potential for gluten development to be higher. Less straw is needed today since we don't need It for animal bedding now that we have tractors. I hear what Sue is saying, but I still I'm not 100% sold on the actual nutritional need for whole grains. I agree that if you're going to eat wheat, it should be whole-grain. But she had said "need "a few times in this interview and I just don't think that's the case. I think we can get these vitamins and minerals from other more bioavailable sources. My husband has been anti-bread for years. It didn’t take much to win him to freshly milled flour (FMF)! Now, he’ll eat my spelt tortillas and rye bread! He loves those...and they haven’t affected our blood sugar levels!!! We’re in the safe zone there.

I always believed that gluten is not a problem. I am extremely crunchy and make everything from scratch, you name it. I bake 100% whole wheat bread on 100% rye sourdough starter. Everything is organic, of course. It is the only gluten I ate (had to go completely gluten free in the last months). My son who had reaction to gluten since he was born (through breast milk) still had it to the bread I make..he wouldn't have it as bad and immediate as to say whole-wheat pasta (just whole wheat organic flour, no synthetic vitamins, bleached or whatsoever), but he still does. I'd love to know how to help, but for now, both me and him are completely gluten free. I do still make fermented buckwheat bread from soaked buckwheat groats.

This was very inspiring. I have been making my own sourdough for several years with organic shop bought flour, generally a 50/50 ratio of white to wholegrain. Now I really want to mill my own! The other day I had run out of bread and out of desperation bought a loaf of 'sourdough' from our local shop. The smell whilst it was in the toaster was revolting. I checked the packet, it was gluten free and had about 15 ingredients. I had to chuck the whole packet!

I've been milling my own grains for 2 years. We didn't experience major health changes. But, we did notice that our kids stayed fuller longer and were less snacky. After our last baby was born, we had a lot of store bought bread and the kids were hungrier and crankier. I was spending way more time getting them extra snacks. Also, my husband and I tracked our blood sugar for awhile and my freshly milled bread does not spike it much at all versus regular bread, which spiked it as much as eating higher glycemic foods like rice or corn. So I can see how it would be helpful to eat it to avoid diabetes.

Wow! I kept stopping the video to share or look up information! The information Sue shared makes so much sense to me. I feel I finally have the missing pieces to nutrition & health that I just didn’t understand before. Yes, I have gotten bits & pieces of what feels like a complicated puzzle, but as Lisa & Sue said…just eat real food. Yes, I have heard this many times, but I have never heard that freshly ground whole grains are the missing part of healthy nutrition. We have been eating from scratch, I would say 100%, but only using freshly ground organic Einkorn wheat berries mixed with Einkorn AP flour to make sour dough bread. We look forward to using more freshly organic ground wheat berries in baked goods and hopefully reaping the health benefits. I’m glad you talked about why Keto works for people who are not going to cook from scratch and need to buy from the grocery stores. Keto eliminates processed foods that are unhealthy. The Vitamix will not mill the flour as fine of a texture as the grain mills will.

This blew my mind. I've had trouble with wheat especially recently and I've also ended up not being able to eat eggs and I haven't been able to handle dairy for years, even in the raw form. It would be interesting to experiment with this and see if it helps!

This was so interesting and informative! As a person with Celiac Disease I cannot digest the proteins in wheat or wheat related grains. I mill my own gf grains and have had recovered much of my health because of eating sourdough made with fm ancient gf grains.

I had a blood test for gliadin back in 2009. It came back positive. So I don't know if would be able to eat any grains that contains gliadin since gliadin is the protein that make the bread rise. I been away from gluten since I was diagnosed. Stephanie Senniff says that most of the gluten allergies today are related to Glyphosate. They spray the crops with roundup right before harvest so they dry faster. So one would have to make sure there is no Glyphosate in the grains that they purchase. I purchase from Azure, and they have a video saying they will not purchase anything that has glyphosate. So Azure would be the best place to purchase the whole grains from.

Hmmmm I use her bread dough recipe, tweaked a little bit, and it calls for 4 tsp of yeast . I’ll try 1 TBS next time!

I still fully believe there are benefits to sourdough, plus to me its so much easier and simpler. So we are doing whole grain sourdough. I still won't do yeast!
