My husband and I love that ginger dressing lol About once a week I make a bowl thing similar to the ingredients in a lettuce wrap. Cabbage, cucumber, green onion, carrots all shredded/finely sliced topped with a little ginger dressing and mixed up to wilt a tiny bit while I make the protein. Either impossible beef or crumbled tofu and some onion, browned up until kinda crispy. Then I add soy sauce/liquid aminos, sriracha, ginger garlic paste, green onion, black pepper, crunchy peanut butter, rice vinegar, lime juice, and a little ketchup and cook it a little longer to let everything meld. Top the salad with this protein, and some sesame seeds + avocado. It's SOOOO good! I bet this dressing would be great with it.

carrots are one of the few plants that become more bioavailable when cooked. i recommend lightly boiling them for maximum benefit!

Most vegetables become more bioavailable with cooking. Mustard greens, turnip greens, collard greens, potatoes, and most other root vegetables are best eaten cooked for us to digest and absorb the nutrients. Asparagus, kale, spinach, mushrooms, and broccoli can be eaten raw, but are much better for us with a little cook time. Beans are a fruit, but must be cooked. While most fruits can be eaten raw just fine.

From the website: Ingredients ¼ cup olive oil, swap for broth for oil-free recipe ¼ cup rice vinegar 2 tbsp miso paste 2 carrots, medium, roughly chopped 1 inch ginger, chopped 1 apple, chopped 1 lemon, juiced 1 tbsp maple syrup ¼ yellow onion 2 cloves garlic ¼ cup water, or more as needed Add all ingredients to a high speed blender and combine until a smooth dressing is formed. Transfer to a jar or salad dressing container, and store in the fridge for up to one week.
