On a recent trip to Tokyo, we tracked down Tamakiya, and with Keiko-san's help, purchased all of the components to re-create the experience you featured. This afternoon we held our tsukudani tasting menu and invited our 2 kids and their spouses. We started off showing your video to give an overview, then proceeded with each course. It was so oishi and unexpected. We all thoroughly enjoyed the combinations and the shared experience was priceless! We had similar apprehensions at the start, as you did, (tsukudani is for rice) but everyone agreed that it was so much more than we could have imagined! And as mentioned in another comment, the historical aspect was interesting indeed! Thank you for great content!

Had our first Yatai experience yesterday.. initially we didn’t expect much but it turned out the food was really good.. watching the older couple working cohesively & efficiently was quite amazing

What interesting and unexpected combinations of food! Pairing Tsukudani with traditionally Western foods and wine was a real surprise. This video was the perfect combination of ambiance, delicious foods, and fascinating information. Hearing that the zazenmame does, in fact, represent the monks' crossed legs while practicing zazen made me smile. Just perfect. This video was a delight. And so were you two, as always, handsome, knowledgeable, and endearing. 💜💜

Excellent video of a dish I knew very little about. I've always used some leftovers for Tsukudani (if I had the energy) but didn't know it was so expansive!

I love Tsukudani! My favorite is the konbu with katsuobushi.I always bring some home for gifts and for myself! I will definitely go to this store when I go back to Tokyo.

Interesting video. Did not know about this. Like the idea of the butter mix. I do herb butters. Maybe have some of these products in your next gift box. I do know Edo was the origin of sushi and that it was fermented, not fresh like now. Your hostess was lovely.

I love tsukudani! I usually make shiitake tsukudani but still want to master the kombu tsukudani one day. This looks so interesting. I indeed always eat it with rice. Never thought of pairing it with western style foods or wine. It makes me wonder what else could be paired with it. Would a tsukudani stamppot work for example🤔 (dutch traditional mashed potato dish). I'll pin this store on my google maps perhaps for next time I'm in town. Perhaps it's fun if as addition to this video to show us around Tsukushima. It's the birthplace of tsukudani. Perhaps on Shinichi's world.

You can definitely eat miso straight up, but because of its sodium content you want to eat it in moderation.
