Well, I finally made the chili. It turned out really good. Using some of the beans to thicken was spot on. After I made it I had to leave for a few hours. Letting the chili rest brought out the flavors. I'm still not 100% with the cauliflower but it wasn't bad. I'll make it again. Thanks.

I'm liking the name of your channel. That's where I am. One question, anything with cauliflower scares me. It looks like whatever but how's the taste. Good luck.

👍 Thanks for the comment. Cauliflower is simply cabbage. It has a sweet character to it, but it can also have that funky after taste if you don't cook it properly. That's why I like to roast it or saute it. A dry cooking method bring out it's natural sweetness and not that funky flavor. (●'◡'●)

😊Sometimes, I f find a good replacement for an ingredient with gluten, I will use it. The other day I felt like a quick dinner so I cooked a gluten free, vegan frozen pizza and topped it with roasted butternut squash to make it taste good. It was amazing. I didn't set out to eat gluten free that night, I bought the pizza on sale, so I went with it. Thanks for the comment.😁
