Poblano is not Latin, it is an American spice used since preColumbian times. The Latin touches are the ones brought from Europe (Spain and France mainly in Mexico). Anyhow, great hotel with great ideas.

All that region was part of Spain, and that type of music is still heard in the Southwest US.
