Someone once told me it meant hemorrhoids. Now I know they were confusing it with emerods, which are also mentioned in the Bible - but at the time I didn't know what hemorrhoids were either so...

while this isn't very scientific one contributing factor could be that nimrod just kinda sounds silly, which probably has to do why it was apparently a slang word for penis at a certain time & place (though that probably also has to do with the "rod" in it)

I had thought it has a lot to do with a single (very good) Bugs Bunny/Elmer Fudd cartoon where they play the parts in the opera - and thus Bugs has to insult and degrade Elmers version of Nimrod. And since it was such a hit, the name just kinda stuck?

Bugs Bunny mocked the buffoonish Elmer Fudd as being a "Nimrod," a "mighty hunter." Kids of that era did not get the Biblical reference and thus thought that "nimrod" was a new cool word that meant a buffoon. And that's pretty much it.
