The bacon is dark and tastes like jerky because it basically is. Cured means to preserve meat by smoking salt or dry aging which is what jerky is. If you want to taste a new meat then you want it fresh as possible. Anything seasoned or cured is going to taste very similar otherwise.

Yeah, after cooking more and more wild meat I've begun to realise how much more darker the meat is compaired to store bought. Tastes better too!

Thanks for answering this question for me mate. I did wonder that. I also was told by the supplier that the bacon only needs to be cooked a few minutes rather than crispy as it has less fat content.

No worries I’m a biologist, love lord of the rings and loved New Zealand when I visited 20 years ago had some top notch wild meat there as well. I also did a fair bit of bush cooking on my travels through Africa and South America.
