Michael Buerk is annoying and unnecessary interviewing two passionate chefs especially Paul who doesn't need assistance or someone who rather talk about Royals and their personalities and lifestyles almost as much as the food they ate.

Thank You, Chef Buerk....I LOVE the importance you bestow on the various events that menu's are established and prepared. Particularly something as IMPORTANT as a Coronation! In THIS instance, 50 years of a VERY famous recipes...including Melon Balls...and sometimes Coronation Salmon. Included in THIS video is Chef Paul Ainsworth. In His opinion...it is "Coronation Chicken". He presented a "pink" chicken prepared as Queen Elizabeth, herself, wanted done. In this video, the Chef prepares the " Coronation Chicken " so we may understand what it represented to the Queen. The stock is very important for the flavor. For instance, Yogurt and Mayonnaise are very important for the recipe. Chicken breasts is the meat Only. Moist and Tender, which is the important factor. Finishing the chicken with a "Coronation of Coriander" to top it off. Beautifully prepared and executed by the Chef....Thank You!

I use to *love* when watching _Upstairs, Downstairs_ the camera would pan in and slowly go down a well set table, allowing the viewer to study all the little details. Such perfection!

Good news they have! One of the last British monarchy cookbooks was released in 2002 called The Coronation Cookbook released in 2002 during Queen Elizabeth II’s reign :))

I think the comparison speaks to the widespread recognition of Oliver and Careme. He's saying that despite no TV, Internet, and radio, Careme was a widely recognized name.

I must agree with Jana. He should have compared Careme to Newton or Einstein. All three men put down the fundamentals on which later generations of greats built upon. I am aware that this comparison is still controversial, but I’m just chipping in with my 2 cents’ worth.

I honestly think the 50s was the best style Era. The ladies looked so lady like and the men looked like gentlemen but everything seemed so...modern at the same time.

In 1953, rationing was still in effect in the UK. By contrast, rationing in the USA had ended in 1947. UK rationing ended July 4, 1954, almost ten years after the end of WW II.

It was my understanding the Queen did not like/eat spice or garlic (from documentaries &reading) Maybe this is why it was served to 'foreign guests' (if I recall correctly, it was because garlic=bad breath, which isn't good when talking to dignitaries and spices - in case it upset her 'constitution'. ~I prefer Nigella's 'Jubilee Chicken'. That's more up to date & yummier to me

Play safe. Always use the drumstick (deboned) if one is serving the guests. Thats the best part, not the breast meat. And the chicken have to be free range (9 months up). Best cook method is the Hainanese Style. Simmer till cook (just nicely cook) timed & ice bath. Then cut cold. Pour the cooked sauce on top.

I’d rather see how the coronation chicken was made for the coronation. I don’t much care what the modern chefs ‘take’ on it is. I watch this show to see how prior generations cooked and ate. If I want a modern take, I’ll watch a modern cooking show.

If there's a "modern take" on something historical, it can often mean that the original ingredients and method resulted in a dish that may not appeal to today's palette. They remarked on the original recipe tasting bland - which is a reasonable criticism of a recipe from the early 50s when spices, particularly curries and similarly "hot" blends, were used more sparingly. What Paul's done is actually a great improvement on the dish with a relatively small change in method and the inclusion of a couple new ingredients - visually more appealing and with a more complex and layered flavour profile.

I find the chicken looks particularly unappealing: no color on it, being poached and then topping it with fancy mayo. Pass, Michelin star or not. Sorry.

Salmon is not the best fish. Very common river fish. 1. Silver Promfret 2. Cod Fish (Alaska) 3. Red Garoupa 4. Wild River Marble Goby (Malaysia) 5. Dragon Tiger Garoupa (Hybrid-Sabah Malaysia). These list of premium fish is so delicious. For lazy. Use cod Fish the best. Giant River Prawn : Thailand. Can air flown them in. Look good serving just one piece on the plate. Never fail to impress the vip guests of their premium size

Its what most professors and historians probably look and dress like 😂 as a history major in college one of my professor’s offices had piles of books everywhere and all over his desk- i find historians like matt amusing because they remind me of those college days and the professors who are too busy looking harried, staying up late grading essays and writing their own essays and books- typical professor and historian 😂🤣

Nordstrom, a department store in US, known for their attention to detail, wouldn't let their sales people eat garlic (I cooked at the flagship, store, in Seattle, in the corporate dining room-no garlic allowed in the food).

This Indian curry recipe in no way ressembles any Coronation chicken recipe. It's just Indian food, which may good but can't be called "a take" on the original Coronation chicken.

i have followed the royals all my life and now i just dont see them the same. it has change begining with harry and mehgan they have dirtied the royals and now charles is not strong enough to put his foot down on these two. it is just not the same. i wish the Queen was alive. i just dont like the royals anymore the yorks, harry and meghan and those kids that she hides maybe they look like her mother

They had light in the kitchen but no ventilation. I'm bet that smoke inhalation from the cooking fires contributed to the death of Careme and a lot of kitchen staff back in the day.

@@bluefaery1865 I'm sure that they did but it wouldn't eliminate the byproducts of the multiple cooking fires. Modern kitchens have a ventilation 'hood system' for this reason. One night our restaurant's ventilation went out during dinner service. Within one hour the air was horribly smoky and the guests were very unhappy in the dining room. If it's like that with gas I can't imagine wood. 😬
