I feel like I missed out. I've never played a Persona game, and now I want to, but I don't know if it's one of those series of games that I would need to start from the very beginning to understand what's going on, or to know certain characters.

Not at all. Each game in the series is its own separate story. They use a few reoccurring characters and the world itself is linked to some degree but it's very minor. Its like Pokemon. Each story is unique to the game and you don't need to have played the prior ones. Sometimes Red or Professor Oak shows up but that's about it.

Never too late. But the game's time consuming as hell, but it is an absolutely beautiful game. Good thing there's no continuity between the games so you can jump into P5 without worries outside of very minor easter eggs. Highly recommend it, and people I've recommended it to finish the game saying the same thing.
