There's something very British about how understanding and polite Moss is when he realises the mistake. As soon as he realised that the cannibal wasn't a raving lunatic, but a quite reasonable fellow, he was all over the initial chock and just wanted to help in a way that didn't involve offering himself up to slaughter.

I thought I'd seen this actor somewhere before. He is Philip Rham, a UK born actor and previously a professional cellist and singer. One of my favorite scenes in Band of Brothers was when the German officer was allowed to keep his sidearm. I read somewhere that this was not unusual. German officers had to keep control of their troops after the surrender. Soldiers who caused trouble were subject to being shot.

It's kinda funny how this cannibal guy is almost like a perfect realistic stereotype of most real modern German people, in spite of how 'hardcore' their language sounds, and their badass metal/extremely kinky reputations, they really ARE actually this outgoingly incredibly over polite and friendly and quirky to people, especially if you are a lost tourist or something.
