So I'm on the Mediterranean diet, so I substituted the butter for olive oil, made a paste & did as you did. Soooo delish. Can't see how to post a pic. But lovely & crispy skin & tasty!

Great Job Marion!! Fantastic recipe!! I Guess we can various flavors butter stuffing if we follow your roasting techniques. - Just for the audience just incase they are wondering what is difference between Baking and roasting !! - Temperature: The main difference between roasting and baking is that roasting happens at higher temperatures than baking. The temperature of the oven should be 400 degrees Fahrenheit or higher when you're roasting food. Baking is done at lower oven temperatures, below and up to 400 degrees Thanks Cyril Lewis from Canada!!

Just tested out a stuffing to go with this: sai ua (northern Thai spicy herb sausage) and bread stuffing. Infused the chicken broth with lemongrass, galangal, and kaffir lime leaf. It was bomb 🤤 might add chopped jicama to it next time for extra texture

Made this tonight. I was sure it would be great, but I was also sure that the green curry aspect would be too hot for my wife. Both of us loved it just served with steamed broccoli. Plate licking good

Hi Marion! Big fan here from Madrid Spain. Do you know of any way to get your products over here? Also - if I´m cooking a 2.5 kg chicken for 100 min at 220 c, do you think the skin will still be OK or will the high heat for that amount of time mean it burns? Thank you!

I so wish I could get a hold of Marion's products where I live, particularly the coconut siracha and the new curry pastes. But I understand it's not cost effective to ship from Australia to Iceland.

Oh yeah she is SPICY! It’s a super hot sauce but great flavour! I love Marion and her products and am lucky I can get them here in Australia. Her teriyaki marinade is very well used in my house! I always have some kind of marinade or sauce on hand of hers. I have both cook books because I love her cooking. Have made many recipes but her chilli jam is such a winner (I own a French restaurant and my staff leave me notes for more of this chilli jam) and her chilli jam tray bake has been made many a time in my house.

Hi Marion I tried it tonight following the recipe but didn’t feel it was a complete success. It could be my oven setting, it was more like fan forced so the skin split open exposing the meat. The other is the confusion around rotating the chicken half way according to the recipe, which is not shown in this video. Do you rotate it and which side do you roast first? I only had crispy skin on 1 side using a rack on the roasting tray. Maybe I shouldn’t use the rack? Thanks for replying as I really want to get it right next time.

We are terribly sorry this happened to you, unfortunately, the chicken itself could have thin skin and split during cooking. It happens even to the best of cooks. In regards to the turn half way during cooking is to ensure an even cook and colour all over the chicken. Especially if it is fan forced. Any advice would be very careful with seperating the skin from the meat to insert the butter. And hopefully it works out next time 👍🏻 -Team Marion's Kitchen

I wouldn't recommend it. Turkey is a large bird and cooking it at such a high temperature for a long time would dry it out.

Why is it important to have 82% fat butter? Wouldn’t it be better to use clarified butter, so it doesn’t burn, esp. when roasting at such high temperatures. Thanks for your feedback upfront, much love ❤

I would question the legs being "perfectly" cooked for my taste after just 1 hour of cooking, and WOW the amount of salt used combined with the salt in the butter, the she sprinkles chunks of salt over the chicken which is still there when she takes it out of the oven, the basic recipe is good but never seen so much salt used
