Now, I haven't had a chance to watch the HBO series, but I know that they did away with the spores so that they wouldn't need the actors to wear masks. The question that I have is: what purpose do these infected serve for the cordyceps fungus by attaching to the wall this way if they don't spread spores?

The problem with cordyceps and similar fungus is that they are VERY effective with a very specific sets of ants and only thoses ants. If it can't jump from one ant's specie to another it is very unlikely that it could jump from ants to human.

Possible but A: it would take a very very long time (we’re talking probably thousands to millions of years) for such an adaptation to happen (if it ever does) and B: it would probably behave very differently from this.
