In the story it shows that the next day when the towns folk arrived upon the “head” it was but a jack-o-lantern.

And brom only intended to scare ichabod with the attack so he could marry Katrina. He only got hit with a pumpkin assuredly in the back of the head, fell off and was scared enough to leave the town in fear.
