The laughing creatures in the trees are called "Kowakian Monkey-Lizards". The first one we ever saw was Salacious Crumb, who was with Jabba in "Return of the Jedi".

Pergil... they travel via hyperspace

The shapes that Grogu was seeing while they were in hyperspace were most likely Purrgils. They're basically space whales that have the ability to travel through hyperspace. They were introduced on Rebels.

The animated series are well worth it for the lore they add, especially where the Ahsoka series is concerned. Also it was clarified that Favreau meant it's been 2 years since S2 aired, not 2 years in story.
