If you wanna eat Tartare, than you should go to a trusty butcher and get the best quality organic meat you can get (preferibly grassfed, but doesn't make too much of a difference). That steak looked incredibly high quality, for high quality meats, the rarer the better if you cook it, BUT if you wanna eat it raw you can

Overcook a steak should be a crime punished by law. Gennaro's steak is a perfect medium rare steak. Here in Italy, specially in Tuscany, people use to eat steaks even more rare than that one, and none has ever died for that. Beef steak must be at maximum medium rare otherwise the steak will lost its juices (and its natural flavour) and its tenderness.

It’s well done outside and basically raw on the inside. This is why u sear beef then finish it off in the oven, to bring up the temperature in the middle, I️ agree u cant over cook steak but I️ don’t like to eat raw meat either.

AMAZING. I have never tasted a steak (or steaks, I tried the other recipe with the anchovies and steak) this GOOD. The flavours just bounce in my mouth. My daughter is on the edge of being a vegetarian and she ate every bite. The flavours are divine lol. I don't get excited about many things I make, but if I can turn a cheap sirloin into a masterpiece I gotta say something.

This cut of meat is called bistecca, it should be served medium rare, I do agree that Gennaro could have rendered better the fat on that steak, but about poking the meat, garlic skin, and dont let the steak rest before serving... I think, Since he is cooking on a balcony in Italy hearing woodpeckers, I really really think that he does not give a Sh%t for what you guys think ... just saying...

This guy is a genius... If you watch all his videos excluding the one in Jamie's Italian, you will realize Gennaro uses only (almost 95%) of the time, natural ingredients. Herbs, vegetables, fruits and meat at its purest form... That's why he's a genius. He may be Jamie's mentor but each has their own style. I like to cook using only the purest of ingredients...nothing fancy, nothing premixed... Cheerz!

Growing up in Australia I was taught to never use a fork to turn cooking meat on the BBQ. This will cause the juice to ooze out and the meat will dry. Always use a thong instead. Resting time is also very important. But hey...each to his taste & GC is amazing !

Mikel m Someone who has never eaten a real British meal before cooked properly I am guessing. Half the comments about english food come from junk food, IE fish an chips, or cheap pub dinners. Versus say a nicely done beef wellington, which should be cooked medium rare. Thing is rationing of food was done into the 50's in the UK. So people had to cook what they had. Was no other choice. So getting fresh nice meat, or havng lots of choices of spices, herbs etc just didn't happen. So for about 30 years after that it was just a case of getting beyond those ways of eating. Now British food is sort of coming back to what it was, which if you look at more ancient recipes was heavily spiced and full of herbs etc. Can't say I would eat well done steak or lamb though. Has to be pink. Unless it's a tough cut at which point it should be slow cooked for hours to make it tender and thus cooked through.

Its a little too blue inside.. he didnt flip it on it's side to crisp the fat, didn't let it rest, poked it while cooking and therefore losing juices AND THEN he put it back on the cutting board where the raw meat was. Which may be fine but it's not best practice since everyone knows about cross contamination. Not to mention the amount of olive oil would make that one oily greasy ass piece of meat. NOT IMPRESSED.

jaycw669 there is nothing to cross contaminate, the raw beef that was on the board, is the same beef, it's just cooked. Besides, it's beef not chicken. If he had raw chicken on the board, then put the cooked steak on the board, then I could understand your point. But it's beef. You can actually eat beef raw and it won't don't anything to you. Just don't ever try to eat chicken raw, because eating raw chicken could kill you.

NoivernMPA you dont lose much moisture by stabbing a steak. it's not a water balloon it's a piece of muscle full of fibers.

999a0s when you sear a steak, it starts losing juices from outside and some are pushed to the center. thats why steaks are being rested after searing, to allow the juices at the center to expand again. when you pierce a steak at the center, it will start to lose juice (and cook) at the center.

Get your pan really really hot and give your steak a good sear, and you can't go wrong. Using the rosemary as a 'mop' is brilliant. Be sure to let your meat rest before you cut it.

Gosh guys, its just food, stop criticizing how he makes it, it taste good and if its the best to him then great!
