I am Korean and I make Korean Kalbi all the time. I add 1 C shoyu, 1/2 c sugar, 2Tbs honey, 1 T sesame seeds, 1T sesame oil, 3 green onion leaves chopped, 4-5 thin slivers ginger, 2 cloves of garlic, 1 small sprinkle of chili pepper flakes. Marinate about 1-3/4 lb of ribs (1 tray). Soak overnight. Fry on the hibachi the next day. Ono

The Asian pear has enzymes in it that tenderizes the short ribs. There’s ready made marinade brand that I’ve seen on Coupang here in Korea that has pineapple in it too. Pineapple with its bromalaine levels up the tenderness.

Yep, I have used this recipe, w/ small amount of kiwi for tenderizer. I don't have Asian pear near me, so I use a semi sweet/ sour apple, otherwise the same, I only use brown sugar, no pepper. It's the bomb though, these are the best and everyone who's ever eaten them is FULL ON addicted! They're THE best!

Excellent recipe! I just grilled 3 pounds of Prime grade. Super tender. Great for a family bbq. Kids love them because they're easy to eat with your fingers. Also, make great lunch box leftovers for days.

Don’t like to use Kiwi as it breaks down the protein quickly…but definitely use Korean Apple pear. Some restaurants also use coke yes Coca Cola… When rinsing the Galbi in water, you don’t want the meat water logged. Rather just rinse under water along the bone and gently wipe downward to allow any bone shards to go down the drain…try to get excess water off the meat before it enters into the marinade..

I cut crosshatched on both sides of the ribs. The marinade can penetrate the ribs and makes them even more delicious.

first i tried them made by a korean woman . i flipped out wow i asked for the recipe . we have made them and they are very good but she nailed it . she told me some people use coca cola . i have also tried a pieapple soy marinade for the other cut of short ribs the fat ones . i have that with red garlic butter potatoes and cream corn its really a treat when done right ( broiled crisp) i just wish they were more affordable ... its some of the best beef imo .

2024 and I'm still using this recipe, I also use it for arrachera (skirt steak). My family and friends love my meat. 😂 Thank you chef for the great recipe! I do have a question, prior to this marinade, none of my local grocery stores had any good quality skirt steak, it didn't matter whether inner or outter. Regardless, of any marinade I use, it always came out chewy, dry, etc. I've always cooked them on a grill, high heat (no flames obviously). Point is, any suggestions where I can buy good skirt steak, at a reasonable price? I also live here in Chicago. Thank you again.

I'm sure by now someone has mentioned this, but to make things easier when putting meat into a ziploc bag simply roll over the zipper portion of the bag about 1-2" and the bag will stand up by itself. This also makes it so the meat doesn't touch the zipper portion of the bag.

The ribs are in the marinade, to be grilled tomorrow over charcoal. Marinade tasted great straight from the blender. Luckily I had all of the ingredients on hand except for the pear, apple and kiwi, which were a short stroll away. A good hot fire will be key.

I made this recipe a few months ago. It was too cold to use a grill so I followed Adam Ragusea's method of cooking them which was braising. You should go watch his video. I don't eat beef but my family said it was delicious. :)

LOL! Been there. I cook them at 350* for longer. No fires....yet. I haven't used his marinade but mine does have just enough sugar to get grill marks. But I do like to cook mine more well done and they taste like burnt ends. Not the char nasty burnt ends, like smoke'n the point longer to render fat and crisp up type.

Cooking it Hawaiian style, they do add the sauce, some people add chicken broth instead of water to bring out more flavor. The pear already has enzymes that tenderize the rib meat, but the kiwi is more intense.
