My French-Canadian Nana would always make this for Christmas. This year we moved her from Quebec to live with us in the states due to her no longer having family there for support (she’s 90). I wanted to make this cake together but her memory (and eye sight) isn’t what it used to be, so I hopped on KZbin and found this gem. With the help of this video we were able to pull it off, the cake is in the freezer ready to be frosted for Christmas! Thanks June ❤

I suggest that you sprinkle the powder sugar over the sponge first, then cover it with a towel as it's in the baking sheet, and 'then' flip it over and roll... You'll get it straight on and there's no risk of it breaking!

i usually just judge by eyes and then asks my boss if bread/cake is done, works every time. i'm occasionally alone at work though, and i feel like things look better at home, i don't know if it's me or if bread just doesn't get the same color.

Cracking the single eggs into a small separate bowl before adding them to any bunch of other yolks or the dough also prevents getting a rotten one into the dough and having to start over again. ❤️ The three-bowl method for separating with a spoon is great! 😊

I've been researching Christmas desserts and this one looks very festive and yummy! 😋 Also, I noticed that you used a clipboard for your recipe and I wanted to pass along a tip for anyone reading... 📚 I use an "Itoya Pop-Up Easel ProFolio, 8.5in x 11in" binder for storing printed out recipes and it works like a charm! It has plastic sleeves to protect your recipes from spills and splatters and props up for ease of reading but then folds down again for easy storage.

You can use a wisk if you only have one mixer and no time. Just make sure not to let your arm fall off =)

Thank you for posting this video. You have good tips for baking. I am two thirds of the way through with this Christmas buche de noel. Should I add the frosting just before serving or should I do it first thing in the morning?

Hi! You can frost it and fridge it, but then the buttercream will harden and you will have to let it come to room temperature a little bit before serving. You will get a cleaner slice if the buttercream has had chilling time.

Made this today. If I was to do it again I wouldn’t put sugar in the cream. And I’d probably leave the frosting off the cake as it dosnt need any. Way to rich for me personally. I made two it took about 7 hours all up

My cake batter before i added the egg whites turned out really thick like thicker than cookie dough and i can’t figure out why so i added two extra egg yolks and that didn’t do much and I added some water and it helped but by then it didn’t have much air. Not the end of the world because I still hadn’t added the egg whites, but the only problem was there was a puddle at the bottom of my egg whites because they had sat too long so I tried to whip it back up and it just made the whole thing liquidy. In the end it turned out surprisingly well because i added some baking powder. Its a little rubbery but it still tastes really good so im gonna try it again soon.

Ummm for gelatin just use cold water like really cold water almost ice water and let it sit for 10 to 15 minutes and you won't have any lumps. And for hitting it up use a double boiling pan can't remember the name but you can use it to melt the gelatin slowly and it only takes less then 5 minutes to use

Instead of the plain whipped inside I used hazelnut and it just sets it off even more! Also add 1/2 tsp coffee to the chocolate buttercream and it deepens the flavor....I love this cake and hate chocolate!

Many pastry chefs take the cake out, cool a little, add the filling and roll it effortlessly without cracks. No pre-rolling. Each cook and chef is so different with this.

Any high quality dutch process cocoa powder will do! I aim for a $6-8 price range.

For those who want to make this & don't want to use gelatin you can use agar agar,! You can find it in Asian market's & health food it's made of sea weed or some other sea plant, but no ANIMAL PRODUCTS,!!& It works just like the gelatin does!!😁😋❤️👌🏻👍🏻

true! but i think agar agar is activated by heat, right? so you might have to microwave it longer, and i'm not sure if it'll distribute as evenly into the cold whipped cream as well.

I would not freeze the cream mixture. I think fridge is fine for a couple of days!
