Everyone loves Vietnamese baguettes, this is the third time I've made them this year, and every time I'm amazed at how crispy it is, no wonder everyone loves it~
Ingredients (making room temperature: 25°C)
300g bread flour (I used Artisan bread flour)
3g instant yeast
12g granulated sugar
3g salt
50g eggs
12g olive oil (other oils will work)
135~140g water
1/8 vitamin C tablet (100 mg per tablet)
Vitamins are not necessary. Adding them to bread has the advantages of adjusting the hardness, increasing the crispness of the shell and making the volume larger. If you don’t like it, you can leave it out.

0:29 Mix dry ingredients in a bowl
0:53 Add eggs and olive oil to a bowl
0:59 Melt vitamin C in water
1:10 Add water to a bowl
1:15 Mix all ingredients until a dough is formed
1:31 Knead the dough
2:03 Let the dough rest for about 5 minutes
2:07 Continue to knead the dough

2:30 Divide the dough
2:46 Pre-shape the dough
