Because it's a staple and symbol of mandalorian traditions she is trying to repress in her Uopia. Pull the armor, pull the weapons, pull the helmets, pull the traditions, pull the belief system. She completely dismantled all traditions and culture that the mandalorians had for identity. All sense of pride, all sense of history stripped in the name of Pacifism, which regularly gets her into trouble and is something she regularly clung to. Her sister, her own flesh and blood literally joined a terrorist rebellion against her and her regime.
