The picture I saw showed Jim with a bit of a strange haircut, sitting at a desk like Micheal Scott's, and looking to be the head of the branch at dunder Mifflin and it's going of Peacock

I saw that too, I'm pretty sure that's fan art- there's a lot of speculation going around, but nothing related to the original cast or Dunder Mifflin have been announced (at least, not yet). This appears to be a new story in the same style as the original show.
