Today, I made a fruit jelly cake in the shape of a Christmas tree.
The fluffy sponge cake and the three sweet flavors of cream were very harmonious.

● Vanilla Sponge Cake
(Mold size: 25cm*34cm)
6 egg yolks (100 g)
30g sugar (2Tbsp+1tsp)
1g salt
5ml vanilla extract (1tsp)
65g milk (1/4 cup + 1tsp)
60 g vegetable oil (1/4 cup)
120g cake flour (3/4 cup + 1Tbsp)
6 egg whites (210g)
115 g sugar (1/2 cup + 1 Tbsp)
● 3 Flavor Cheesecake
315g Cream cheese ( 1 cup + 1/2 cup )
100g sugar ( 1/2 cup )
55 g sour cream (1/4 cup)
60 g unsweetened yogurt (1/4 cup
5ml Lemon juice (1 tsp)
7 g powdered gelatin ( 1 Tbsp )
35g water (2Tbsp +1tsp)
185g heavy cream (80% whipped) (3/4 cup - before whipping)
10g Strawberry Powder 10g (1Tbsp+1tsp)
2g green tea powder
● Transparent Lemon Jelly
33 g powdered gelatin ( 4 Tbsp )
165 g water (1/2 cup + 3 Tbsp)
330 g hot water ( 1 cup + 1/3 cup 1 Tbsp )
130g sugar ( 1/2 cup + 2Tbsp )
20g lemon juice ( 1 Tbsp +1tsp )
