Definitely homemade syrup with roasted almond! I love the Death and co recipe with a small amount of cognac and amaretto with rose water instead of the orange blossom. Another great one is the Aviary recipe with roasted almond soaked in almond oil before put it in the oven, its much more dark and complex, it can really change the cocktail!

I made my girlfriend blind taste my selfmade version and a storebought monin. The monin tastes like bad simple sirup compared to the selfmade. You just get roasted almonds in your face and a longlasting, full flavour. Thank you for your great work on this platform!

I'm from Austin Texas in USA and a local company here, Liber and Co, makes a really great quality orgeat syrup. Their grenadine is really good as well.

My fav Orgeat cocktail is the Japanese cocktail. I just made a Walnut Orgeat and it really has a strong Maple syrup note.

So thank you for this extensive comparison :) One question though: Why didn't you take roasted unblanched almonds into the mix also? I've a feeling that the roasting together with the skins could be quite interesting 🤔

When I make fizzes/sours, I use my Hamilton-Beach spindle blender. I "dry" blender first and then "wet" blend. It's faster and much easier on your arms.

Great to see this! I always roast my almonds when I make orgeat & agree it makes all the difference! I also use a bit of salt & half white/half Demerara sugar, and I add an ounce and a half of Amaretto for a little extra almond flavor.

Great video. I'm allergic to almonds (they give me a splitting headache if I have a moderate amount), but I can get away with an occasional Mai Tai. I will definitely try out the lazy version. The orgeat I have is pretty good, but it costs US$0.05 per milliliter, and that would be real money for a tiki place. Making your own orgeat sounds like it should be considered a core competence.

Im happy to hear that I won't have to look for the cheesecloth and just use almond milk from the store as I bet that coffee filter wouldnt work :) Just curious: is it a good idea to add one shot of brandy to it? I saw some recipes with that advice. And I guess that would extend its lifetime as well

@FilipDworniczak I actually got a paint filter from the hardware store, it does the job and is both sturdy and cheap, I also use it to strain soy yogurt and make cream cheese, it’s a useful tool in the kitchen if you enjoy cooking 😊

This was exactly what I wanted to see. I make orgeat and give it out to my friends, and I'm just about to do another batch. I will definitely be using roasted blanched almonds this round. Side note, Monin is not a very good brand. I'm curious if a Liber and Co. would be a better comparison.

I wouldn’t recommend that due to their cyanide content. While it may be harmless to eat a few, when mixed with alcohol, it’s different so as I can’t be sure of the safety of those ingredients, I just stay away from them.

I don't like the taste of almond extract so I was curious about stone fruit pit but you're right.... better safe than sorry with unknown solubility. Yours is one of the only recipes out there I see that doesn't call for almond extract so I think I will make it your way and see how it goes :)

@@Elizaflower the extract surely adds the familiar almond taste we know but I recently realized that using double the amount of almonds to make the same quantity of almond milk, almost makes you feel like you added those few drops of extract without the mouthfeel of it (which is what I assume you dislike) Have fun with your experiments

I made the roasted orgeat!! Supper easy used the left over almonds for yogurt and ice cream toppings. Huge difference between homemade and store bought. I will never buy orgeat again.

There are some really good commercial orgeat syrups out there... The one Liber & Co. makes is wonderful as is the one by Small Hand Foods. Both are really expensive though

Not a big fan of Monin syrups to be honest... the grenadine in particular tastes nothing like pomegranate. More like cherries. So I prefer to make my own syrups when I can. I just need to scale down or portion carefully before freezing, as I do not want to waste (I make too few cocktails compared to the quantities of ingredients).

Totally get that! I do the same. P.S. Did you know that in France, Grenadine used to be a syrup of blended berries. Hence why french companies like Monin make their grenadine using more of that rather than pomegranate juice.
