I made this and did a few changes. I used elbow macaroni because I hate how penne can't be eaten with a spoon. I used 10% cream instead of heavy cream. And I blended up some left over thanksgiving stuffing for the breadcrumbs and it was awesome! No seasoning was needed at the end at all. I did add a bit too much red pepper flakes, but I'm ok with that. Made me eat it slower and savor it longer.

This reminds me of a recipe I’ve made over the years - sausage cups - never thought to turn it into a pasta dish! Made this pasta tonight and it was a huge hit! Sausage cups use bread cut into 2in circle - pressed into small muffin tin and baked 375 until golden Filling: 1lb hot sausage Minced 1/2 small jar of green olives 🫒 Minced canned mushrooms- as much as you want I use about 1/2 15 oz can Garlic Heavy whipping cream Shredded Parmesan cheese Cook just like Sam shows and then just add mixture into the bread cups and warm up in oven! Thanks for the inspiration! Love your channel!

I've been making this dish ever since I saw you on a Discovery Health show where you made a healthier version with evaporated milk and turkey sausage. It's been a staple in my family ever since and my kids will ask for it, we call it "sausage pasta." And I made it again tonight after seeing this episode. Same here! We've been making this recipe for years. It's my husband's favorite dinner and I think it's pretty amazing too. I've also shared this recipe with my neighbors, they love it too. Only thing I'm totally bummed about is that I can't find the Jennie-O spicy sausage links at our stores😭. We've tried it with regular beef and NOPE it's not the same. Thank you Sam for this recipe!!!

Love Sam and just made this recipe. Couple things to note if your taste is anything like mine and are thinking about making this: 1) Like Sam says, the “spicy” sausage alone is not nearly spicy enough and I added the red pepper flakes but would have had to hit it much harder if I wanted the right heat for me and 2) This dish is super super rich in the best way but I needed some acid to help balance it a bit. This is not me being some top chef judge snooty - I just really needed some acid. My way of killing both these birds with one stone was to stir in a couple splashed of a vinegar based hot sauce into the cream sauce. I chose Cholula based off of the hot sauce I think goes the best with New England clam chowder (which I have a similar acid craving with). It turned out awesome. The panco breadcrumbs were a great texture addition too. Just something to think about if it’s your first time making this.

I made this the other day but half the recipe. Since it was my first time making it I followed the directions exactly so I could get a feel for it. It was one of the best dishes I've had in recent memory! I can also see this as a great foundation for many other cream sauce dishes - alfredo (with fresh nutmeg) and this cajun dish made locally called Fat Jack's (with onions, peppers, celery, chicken, and andouille sausage). This dish has now been added to my "core" recipes, and I can't wait to make it again!

@Cayden I just motor through it. It does help to cut the bigger cloves in half and put cut side down. It’s so much better than my other one without Sam’s face on it! My kids think it’s magic because we don’t have to peel garlic.

Tried this tonight & ended up with a “pasta greasefest”! That saying, I did cut down a tad on the butter & used double instead of whipped cream, which split in the hot pan. Next time I’ll try it with bacon lardons & heat the butter & cream in a cold pan to stop the split. Thanks for the upload Sam 👍

I tried this dish and as I always seem to do, made my own substitutions to see if I could make it better. Sam said if you don’t have bulk Italian sausage you can just use links and take the meat out of the casings. Well, I didn’t have any bulk Italian sausage and I didn’t have any Italian link sausage so I used hot dogs. Since I wanted it to be a little spicy, I included a couple of hot links. I just sorta cut them into pieces. Okay, you’re supposed to add heavy cream but I didn’t have any heavy cream so I looked for whipping cream. I didn’t have any of that either. Instead I used Cool Whip non-dairy topping because it’s like whipping cream. Instead of red pepper flakes I just used corn flakes. I had penne pasta so I used it. I even cooked it. I put it together and no one here would even try it. I put some in my cats dish and she did her business in it. I’m guessing my substitutions didn’t work. Okay, I did it for real following the correct instructions and ingredients and it’s a great dish. I highly recommend it…

@@bethmcmullan9872 well yes and no, there is a creamy sauce that you can make for the traditional recipe, but I have known people to blend cream or milk in it to stretch it and disarm the overwhelming saltiness of the guanciale. In Tuscany where I am from we tend to dilute the sauce because our bread is salted aswel as the cured meats which often accompany a dish like this, otherwise we will be awake in the night to drink a gallon of water :).

I love cooking with Italian sausage. I always add it to my spaghetti sauce (along with some ground beef) before I toss in some shredded mozzarella, top it with some pepperoni and bake it, and to my chili. It's a game changer!
