Well perhaps the slow heating process combined with the salt(acidity) in the peanut butter to break down the proteins then the fats from the nut entering the meat ( more fat= more tender) does it.

Interesting. I tried this last weekend. Oddly I had ZERO difference in flavor. My pet theory is this: The peanut butter I had on hand had no added sugar. I'm guessing that the residual sugar in the peanut butter had to be there to caramelize in whatever trace amounts were left, which added a flavor that wouldn't otherwise have shown up. I'm going to try with a few different brands of peanut butter as well, just to test it out. I'll report back. o7

@@tat3r Thanks for the reminder. Well...I ran the test again last weekend on NY Strips with Jif, Peter Pan, and Skippy and sadly, I didn't taste a lick of difference. Nothing. So either there's another variable in there or Guga did something else. MAYbe I was too thorough in getting the peanut butter off? Eh. I'm disinclined to try it a 3rd time.

I’m Vietnamese, and there is a lot of misconceptions about that sauce you called peanut butter sauce, the sauce you called peanut butter sauce it’s actually fermented fish sauce in Vietnam, or you can say it mắm nêm. Because due to the hard and the time consuming of making these sauce,so people live outside of Vietnam start to create the sauce with a similar taste called peanut butter sauce or they use hoisin sauce instead(Hoisin sauce actually a Chinese sauce, but people start to using this sauce to replace, and it still creates the same good taste of original one)

Try the same thing with plain white Greek yogurt! In Georgia (The country not the state) people use yogurt to tenderize chicken. cover the steak lightly with a yogurt based marinade and cook it in the sous vide. Wipe off any excess yogurt so you don’t get a dairy flavor but it will make it super tender. Probably won’t be as tasty as peanut steak but i bet it will be more tender
