Just had blackened Salmon earlier tonight, this looks excellent. My personal favorite seasoning for most fish is a coating of: Butter, Old Bay, and a bit of lemon juice. It's the tastiest seasoning profile I've ever had. AMAZIN'!!!

I usually incorporate a super, super thin layer of corn starch (or potato, whatever) on top of the seasoning when I blacken fish - it’s not traditional but I find it helps get that glassy, snappy texture I want, it adds to the depth of the color, and it even helps the seasoning maintain a little better flavor, I imagine because it’s a bit protected from the heat

Walleye is the best tasting fish ever insult you people get eaten cuz mostly have to catch it yourself. There's a type of freshwater bass called striper that's actually just behind walleye.

@@gaittr it was absolutely amazing. I took some of the basics from this recipe. We have a good friend who used to live in Alaska. He goes back a couple of times a year. He always brings us back, fresh salmon and haddock.

@@gaittr relax. I agree walleye and striper are delicious. I've caught, cleaned and cooked both. The texture doesn't lend itself to this preparation method. Catfish, snapper and other light and flaky varieties work best.

when your butter browns like that it's burning, to keep it from doing that add 1/2 tbs of olive oil. It will def taste better.

Loved the ease of this recipe thanks, but I didn't have the cajun seasoning and used Old Bay instead and it came out way too salty. Next time I'll get the correct spice and not use so much.

I’ve noticed that despite drying my filets. The fish still seeps a good amount of water once it cooks. Do you let the fish sit out for a little while even if you pat it dry?

You should make your own Cajun seasoning so that you control how much salt is in it, instead of buying the store bought premade seasoning. It will probably taste a whole lot better too.

I’ve found the same thing. Any commercial spice mix you buy will have salt have the #1 ingredient. With the salt from the butter and from the fish, it was too much. So I’ve got a blackening seasoning recipe with no salt at all. Now with the butter and fish, it’s about perfect.

@@mikebennett9356 The Cajun seasoning he is using has salt as the 3rd ingredient and is not salty at all. And you can use unsalted butter, best yet clarified butter made from unsalted butter, than you don't have to worry about it burning as well.

I gotta try this. Normally, I salt and pepper the fillet, with a light covering of flour but this looks too good not to try. I have a nice pickeral fillet (I'm Canadian) and that will be my supper.

As a guy who has been fishing and cooking all of my life I have to ask this question. From the beginning of your video you refer to the fish as this fish. Four people out there who are trying to follow what you're doing you're not saying this trout or this flounder or whatever fish it is. Why would you make a video and never refer to the name of the fish? You guys make these videos and it kills me that you don't take into consideration that everyone watching Once all of the information. Your presentation was fabulous I absolutely loved it. You've just got to name the fish it's that simple. Don't feel alone. Almost everyone who makes these videos does the same thing. There are even fisherman making fishing videos and they'll catch the fish and say this fish is awesome this fish is Big this fish is blah blah blah but they won't say the name of the dog on fish. I don't know if it's the weed or the meds you guys are taking but please seriously give all of the information.
