For the past several years I have made sarmale (stuffed cabbage rolls). But, I think I will have to start making porchetta! That looks so good man! I think I'll try smoking it and then finish it in the broiler. Merry Christmas Vincenzo!

My grandparents came to America from Sicily. However we always had ham or turkey for Christmas. Now I'm in my 60's and still doing the same but I should honor my original heritage. Thanks for all the great recipes! Hugs to you & your amazing family❤

Your mother is a gem. Loved the enthusiasm for the eggplant lasagna! My personal feeling for the porchetta, the "crackling', there is nothing better. That taste, the satisfaction, pure indulgence. 🥰Great video!!

Perfect timing as I was going to ask you to comment on my menu for a party of six...i am planning to serve three mains...eggplant parmigiana , chicken cacciatore and of course a carbonara spaghetti.... Of course served with a bold Italian Red! One of the guests is bringing a chucuterie board as an appetizer with meats,cheeses and olives , another bringing a dessert

So many lovely recipes Vincenzo 💕 I will be making my own lasagna this year and meatballs on the side. No crepes, but using fresh egg pasta. My mom always used crepes but made manicotti. We all helped. It is amazing with the crepes. My dad’s mom always made him struffoli. My mom didn’t like it. I think I will make some grilled eggplant to go with the salad. Thanks for the idea! We are also cooking a turkey and potatoes plus all kinds of snacks… meats, cheeses, breads, olives, nuts, etc. I am buying a fresh tiramisu from a local gentleman who used to own a restaurant, but now just makes his own tiramisu. It’s wonderful. And I would eat that cream for the pandoro with a spoon too 😊 Grazie Vincenzo. Salud! 🥂

Christmas Dinner isn't Christmas Dinner without cappelletti in brodo for me. We kids would help mamma in the days before, preparing them, getting into trouble for oversampling the filling! Such happy days! Buon natale Vincenzo.

Merry Christmas to you Vincenzo. I make a.special tomato sauce for Christmas Eve that has an anchovies, pignoli, green olives, etc. which has been in our family for generation. I also make pizzelle and strufoli. My grandchildren look forward to this every year. All the best to your lovely family. 🎄

A little tip, if you are working on a gas stove NEVER have the pan that full of oil when deep frying. Unless you want to spend xmas having your local firebrigade visit you. If you need the oil to be that deep use a bigger pan.

Merry Christmas Vincenzo! Lasagna has been a staple in our Christmas since I was a baby. Of course Nonna used to make it and now I make it. Like Nonna I would make everything the day before and keep it in the fridge overnight. My father used to always do a roast ham. When I host Christmas, I put the ham on the smoker so it's double smoked and glaze it there. Traditional in our house there is always a good antipasto platter, freshly cooked prawns and a salad of some sort . The dessert is usually a pav plus a trifle. So a blend of Italian and Australian.

For vigilia it's Baccala Istria style. Similar to baccalà mantecato Venetian. Baccala, potato, olive oil, garlic all mixed into a rough pate, look it up 😁served with Pasutice pasta, or on a nice home made bread, baguette style. Along with a beautiful antipasto, including white anchovies. I'm soaking my baccala right now.

Do you have recipes for the Christmas Eve feast of the Seven Fishes? We are not Italian, but Dad latched onto the concept 30 years ago. Most of what he made then was Asian, but the thought was there. I will be following Dad's inspiration for guests this weekend... I'd like to include one bona fide Italian dish. Thanks ..

Making your bruschetta for my family drinking prosecco on Christmas Day! Made 3 variations, the 2nd the best. I tried using the oil from sundried tomatoes, but it didn't mesh as well as I liked for a fresh dish. Felt too heavy, instead just used regular EVOo. Also, Campari tomatoes are amazing. Rubbed garlic on the toast (fresh sourdough) and seasoned it with some Parmigianino Reggiano, then mix, then salt, black pepper, pecorino and some extra pepper on top.

For us in Venezia Giulia, spritz was white wine and soda ( from the old fashioned siphon) and nothing else.

7 kinds of fish on Christmas Eve including Pasta con le Sarde. Christmas day is antipasti all day with Aperol Spritz, Lasagna all Bolognese, Rib roast with salmoriglio, arugula salad with blood oranges, pomegranate and pistachios. For dessert, Italian cookies including cucidati, cannoli and of course plenty of wine and limoncello. Can you guess what region of Italy my family came from by the food?

On Christmas Day simply make Spaghetti Aglio e Olio. You're safe with that dish ! 😉😀 I here as an Italian like Vincenzo, I wrote in a comment that if on Christmas Day one eats all that stuff that Vincenzo showed in this video, in the end eventually one risks being taken to the hospital. 😅

@@vincenzosplate you’re in Australia Guaglio . So you using Australian products correct .? Australian eggs sugar vegetables meats . The list is long . You or I can buy all the made in Italia products we want , but it’s not their best . Importation is very guarded in Italy . If you think you getting the best Grana Padano cheese it’s not so . Try getting mozzarella de Buffalo in Australia.? Impossible. They’ll have something that looks similar but taste comes nothing close . Just like gelatos & prosciutto San Daniele .? Good luck with that . The list is endless. Yes it’s an Italian traditional meal but with Australian produce . Agriculture in Australia & Italy is night and day . I know no one that flies to Italy daily to get fresh the best Carciofo in Rome Ladispoli. That’s all I’m saying . Yes Italian inspired food . But not authentic produce .its not like buying a Ferrari in Maranello and bringing it bask to Australia. Still delicious but nothing is like eating out there in Campania . What my fam comes from. Or the rest of Italy beautiful regions . How about the mortadella in Bologna .? Emilia Romagna . Forget it about .
