When I was a kid, my family, grandparents, parents, and us kids all made cannoli together, 100 at a time. I have also made mini cannoli, added orange zest to the cream, and dipped the ends in chocolate shavings with orange zest.

I do have the fondest memories from the years we lived in NYC and would go with a group of friends, for my birthday, to a delicious dinner in Chinatown, followed by a walk over to Little Italy for cappuccino and fresh cannolis. All that was missing was the Verdi.

This is also the reason why in pastry shops, here in Italy, the cannoli are normally filled with that ricotta cream when the customer buys them, precisely to avoid that if they remain for a while with the ricotta filling inside, the fried waffles soften and lose their crunchiness, while it must remain crunchy. This, by the way, is also a sign of freshness of these delicious desserts. If you find yourself holding a very soft cannolo (singular) and no longer crispy, it means that the one is not very fresh.

Best Cannoli in Melbourne are from Arena Bros, O'Heas Deli in Coburg. I used to live nearby. They had all the awards on the wall to prove it, too. I'd go there to buy rolls and meats for Sunday lunch (take a number and be prepared to wait) and one of the brother would always say, after I told him my shopping list "And 24 cannoli". I don't really care for cannoli and he knew it. Cheeky bloke. I think all the Nonnas had a huge crush on him.

@11:44 or there abouts, the ricotta doesn't even look like it needs to go through the sieve. It literal looks like the consistency of thick cream. The only way you will get ricotta like that in the western world is if you make it yourself. These gus must have a awesome hookup with the cheese maker that's for sure

Did you know that the reason why marsala has such a different flavor compared to other wines is because they leave the barrel open, so the wine is essentially oxidized. You could say that it's wine made the wrong way, taste is good though so...

Make sure your dough is well-chilled and seal the edges tightly with egg wash or water. Fry at the right temperature (350°F or 175°C) and avoid overcrowding the pan. This should help keep your cannoli shells from popping off the tubes.
