A little curious fact: in Brazil, Christmas dinner is actually Christmas' Eve dinner. On Christmas day we just lay back, eat leftovers and maybe do some barbecue (it's summer in December down here).

In Spain we do, and I just remembered that one ep of Modern Family where Gloria, who's Colombian, gets really upset about that one tradition from her country that she wants to keep not being respected, which is how I learned that in USA they don't do it xD so now I'm curious how many Latin American countries do that. Got me wondering about Mexico since you do the same thing with Christmas Eve dinner...

@@RavenSutcliffe Yes, Raven, we do the 12 grapes at midnight thing. New year's eve dinner isn't as elaborate as Christmas. It's usually menudo or pozole. And the 1st day of the year, just like Christmas day, is just for resting and having leftovers.

I watched your three easy appetizers which included your French Onion dip. I made and served it to our guests with the Kettle Chips you suggested. It was a huge success and I'll be making it again. I also 'heard' your excellent suggestion of serving this dip in a small serving dish on a pedestal. I didn't have any BUT I have several beautiful small bowls and strangely I had just purchased from, Goodwill, four random pedestals. So I hot glued those pedestals to three bowls and a few people asked where is got those beautiful bowls. Today, I hit the Goodwill again and found two pedestal small glass serving bowls and one glass bowl with feet. I'm in love with this elegant idea. Great menu and the game plan makes it even more attainable. I am saving your menu for a special occasion. This Christmas it will only be my daughter and I , but still the puerto rican traditional menu will be on the table: stewed rice with pigeon peas, pasteles (they are similar to tamales but the dough is made with grated root vegetables), potato salad and roasted pork shoulder. Love the salmon/cream cheese pipped on cucumber rounds. You might also try a flavored humus. To keep them more sturdy and so the topping does not fall/slide off, I make a little well in the center of each cucumber slice with a melon baller.

I'm not a fan of mushrooms. So I was thinking I could make a crab salad for the puff pastry, which is so cute. Your choice of red (tomato) and green (asparagus) on the plate was great. So I thought I'd use broccoli salad and pickled beets, instead. These can be made a day ahead. Thanks for your inspiration.

This menu sure does look good. Here in Australia we love our barbie. Christmas day someone revs up the barbie and we put the prawns, steak, sausages etc. on. Plenty of salads are on the table and for dessert.. ice cream and fruit salad and maybe a pavlova. Mangoes, cherries etc. all washed down with some Bundaberg ginger beer or whatever is in the esky. We stay out in the back yard or down at the beach. A good old time is had by all. Your menu has it's place though. An evening when we are all together it would be perfect. Thanks.

@@EntertainingWithBeth Actually a mixture of both. Cards are mainly winter themed but here where I live, Brisbane and on the beach, Santa usually arrives on a speed boat, haha. Shops are all wintery...cools you down looking at it all though. haha. We are a casual bunch. In our family it's like slap on the sun screen, insect repellent, hat, grab your beach towel and off we go. Many people here have swimming pools. We either invade a friends pool or go to the beach on Boxing day. Hope the sun is shinning, today is very wet, well we need it, it has been so dry here for months and months. If it's raining we put the barbie undercover and continue on regardless.... we are a little crazy in our family. But we know how to have a good time.

The goat cheese spread looks yummy! I would spread some pesto on plate and rest cheese on top for Christmas colors. Trader Joe’s used to have a layered dip made of these three ingredients.
