@@jeffsh20 It's a very old saying that has existed before WW2. The idea is that good chefs will eat more because they are cooking good food and are therefore more reliable in preparing a good dish for the customer as well.

I agree about it being like a newborn. I worked in my aunt's restaurant in Chicago. We were there night and day 7 days a week but I loved cooking and I didn't have kids then so I enjoyed it. Plus I didn't write the checks for the place. Even with all the headaches I think Malcolm would do well enough to be able to hire the right management up front and in the kitchen so he wouldn't need to be there night and day like we did in my aunt's restaurant. This guy has the right recipes a big fan base and it doesn't look like he's doing too bad financially so I really do think he would do well with a restaurant.

The last sirloin I did I stole your trick for tri tips. I heavily coated the sirloin with Kosher salt for 15 minutes and man that tenderized that bad boy. Oh by the way, the tri tips were beyond belief. Thanks for your videos they have made my grilling jump up a few notches. Also the other day I was in my local grocery store and my buddy who stock shelves at night fell out over your Killer Hogs t-shirt, he loved it. Thanks

I worked at "Quincys" way back in the day when they actually had a meat cutter that did all the steaks....I would buy whole sirloins and have him cut to my specs......miss that guy he died of sleep apnea.

Malcom is a bonafide saucier. Sauces he makes in these recipes are gold and can be used in a variety of cooks. I'm using this whiskey sauce on a rack of beef back ribs today. It tastes amazing in the pot and am sure will compliment the beef well. Also look for the recipe with his bourbon butter glaze that he puts on chops. It goes excellent as a pork rib glaze as well. Thanks for the BBQ knowledge and recipes, Malcom!
