This video will show you how to cook the perfect tri tip recipe! USDA Prime tri tip smoked then seared over oak! Yeah, baby!!! This is my favorite way of cooking this tender and favorable cut of beef! Seasoned with just a few ingredients (recipe below), then let the smoke and fire do the rest. I cooked this in my Lone Star Grillz offset verticle: lonestargrillz... low and slow over coastal oak, then seared them over the LSG's firebox using Grill Grates. This resulted in some of the best tri tip I have EVER had! Simply amazing!
Tri Tip Rub Recipe:
1/4 cup kosher salt (or sea salt)
1/4 cup ground black pepper
1/4 cup dehydrated minced garlic
1 1/2 tablespoon dried parsley

If you're ever in northern NJ you can go to any butcher shop in the ironbound section of Newark and they'll most likely have it available.

Tri-Tip is high at the top of my favorite cuts list. I’ve always likened it to a nice Filet Mignon type flavor, very beefy yet tender. Those were beautiful! It’s weird that sometimes we can get Tri-Tip here and sometimes we can’t. It also fluctuates a lot in price but I grab it every chance I have. That Lonestar really puts some beautiful smoke on everything I’ve seen you cook in it. Naturally the sear was excellent and I only wish I was there for the taste test 👍🏼. Cheers, brother! 🍻

Okay so I waited until the end to give you a thumbs up. Being from Santa Maria I had see how you would do these. Not too bad. The end result was acceptible. But it's still best to Q'm over red oak and a crank grill. You got the seasoning and temps correct. Good job. Heck I was camping at the beach this weekend and had em in a Weber kettle with red oak chunks on the charcoal base to get it going. Gotta do what you gotta do.

It is one of the easiest meats to BBQ, only takes 45 minutes, Brisket and Pulled Pork 12 hours, you get a big rush at the restaurant Tri Tip in the evening. I do not know why every BBQ restaurant does not add it to their menu. It really is a no brainer. And just think all of those Ca. trans plants would love it, LOL

How funny you mention pinnacle Peak. I live 5 minutes away from that place and they are still grilling on those big open pits. Nothing like seeing a 36 ounce T-bone get dropped onto a huge open pit 😋 those tri tips looked great and that Lonestar offset you have is my dream smoker, love that thing

Tri tip is one of the underdogs of beef. Incredible flavor. The slicing is crazy important like you mentioned, but I love them. I like to sous vide with a quick sear on the Blackstone, but the way you smoked is probably even better for flavor.

Thanks for the great video Greg. Funny that you mentioned Pinnacle Peak. I was a cook there for about 4 years in the early 70's. I worked in the El Cajon, Ca. location and that is where I developed my love for all things grilled and barbecued. I live in NC now but still remember the days of Santa Maria style cooking in the center of a restaurant surrounded by many hungry dinners! Loved your video and I am now a subscriber. Looking forward to more. David

We're so used to tri-tip here I'm frequently looking for something else. And if my dinner ideas don't inspire, "OK dear, I'll get some tri-tip for dinner". It's everywhere here in So Cal, a go-to staple. So easy, indirect cook to rare then sear to medium rare, on almost anything. Weber kettles, firepits, even beach fires with a grill thrown over it work, but personally I think Santa Maria grills do it best. Nice job on that cook!

Tri-tip is definitely underrated. Every time I cook one slow and low they turn out awesome, I’ve never smoked one though. Next time I see them in Costco I’ll be picking one up to smoke.

Scottsdale, AZ had a Pinnacle Peak Steakhouse North of town just below Pinnacle Peak Mountain, for many years. Same thing they would cut your tie off and hang it in the rafters of the restaurant. I remember when the central air would kick in, those ties moved like a field of wheat in a windstorm. The steak pit was outside and was huge......they used Mesquite wood.

Loved the video, Greg! I have exposed dozens of folks to tri-tip here in San Antonio over the past 5 years. At first, no one had heard of it, now it is readily available at our local grocery chain. I usually sous vide it at 132-135F for 8-24 hours depending on fat content/marbling and sear over hot lump charcoal or under a broiler. Regardless, I have made a lot of friends with this under-rated cut of beef!

Tri Tip has been a west coast staple since i was a little boy. can remember when people on the east coast and other countries didnt know what I t was. Used to an inexpensive cut but now that in such high demand tha price has doubled

I would go to Pinnacle Pete's while I was stationed in the Tucson area. As an Airmans on payday we would go out for a great steak. The bbq pit was in the center of the restaurant and cut off ties were all over the ceiling including a Air Force tie from us. I sure miss it.

Smoke always improves the flavor of grilled foods. Even if they are only exposed to it for 15 or twenty minutes, it's still worth it. It's dinner time here in Michigan, fix me a plate, please.

Those looked awesome! I do tri-tips on my Weber Performer. Doing a reverse sear with coals or lump (and wood) is a bit more work, but it comes out great. Never used coastal oak. I bet it’s great. Thanks, Greg.

I remember Pinnacle Peak. There was another steakhouse up the road a-piece that my dad used to take us to. OMG. I forget the name. I don't think it was the original Pinnacle Peak. It was the best. I little bit of a drive from where we were at 32nd St and Camelback but so worth it. Always a treat.

YES! That's the location I remember so fondly. They still served up a good steak in Santee, but it started to go downhill. When they moved to Lakeside, it was over... Cheers David!

I have been going to Pinnacle Peak for 45 years. They have always used mesquite to my knowledge.

I live on the central coast by Santa Maria. I adore tri tip. People who love BBQ need tri tip in their lives. Oak is very necessary, although your grill is very non authentic. Suzy-Q spice rub is a great basic authentic rub.

good old Santa Maria SPG+P Seasoning! couldn't fathom ever having tri tip with any other seasoning blend. I didnt know Pinnacle Peak had multiple locations. I grew up close to the one in Colton, California. packed every night of the week. only legit wood pit BBQ in the Inland Empire. There is a place up along the central coast called Joko's thats people come from hrs away to eat at. i lived close to it after i moved up north and even more popular. so busy walk-ins will have to wait 2 hrs IF they will even try to work them in. another central coast place, had the best and most tender tip i ever had, you could literally cut it with a fork, never been able to get it that tender myself in my 20 yrs on grilling. Need to see if the guy if he will tell me his secret now that he had to close the restaurant a year or so ago

I like tritip blood rare cooked direct fast and hot. It rests into cooked. It isn't as tender, but the umami flavor is MUCH better hot and fast than slower.
