Interestingly, I think that she was okay with letting Grenouille kill her. Considering her father was coercing her to marry a guy she didn't like. I think she would rather die than live a life she didn't want.

I think that’s actually in Grenouille’s imagination: when he realized he had no scent, he remembered the first girl he killed, and saw himself as invisible bc of that (no scent, no soul), and that’s why he obsessed even more in creating his perfume. So now that he has the last ingredient, now that in his perspective he created the best scent in the world… he can now believe he gained a soul and now is able to be seen and loved by people like her.
