"Heat with no flavor is pointless." Woolie spitting some universal truth. My favorite hot sauces aren't my favorite because they're hot, but because they taste amazing enough to brave the spice. Man, I need to reload on some Volcanic Peppers Spicy Ponzu. That stuff is magic.

When I make stir-fry noodles I add this spicy sesame seed oil and a little bit of honey to get a sweet and spicy combo going on. It's so spicy but the sweetness is so good!

I recently experience the joy of Jerk Chicken. Guy doing it out the back of a church (the right amount sketch to add to the flavour). Honestly is amazing and worth the wait of him only being open friday and Saturday.

Caribbean spices and seasonings are VERY different to most international spices and seasonings. I've had relatives visit Trinidad & Tobago and they say even the KFC hit different.

Getting your friend a prime cut of beef is a level of friendship I did not know I needed. As somebody who can´t handle heat very well I totally agree. Just spice for spice´s sake is worthless but if it is on top of a bunch of flavour it is so worth it.

We all go through that phase once we first try it. If you want something truly next level, take frozen Perogies, boil them for just long enough for them to soften, season them with Montreal Steak spice, then swap to a pan and oil fry until crispy. If you want a dip add 4 tbspns of sour cream to roughly 1/2- 1 tspn paprika and chilli powder then just a squeeze of lime. You could sell this shit in resteraunts im telling ya.

I have a friend who's a super picky eater and like refused to properly season any of the food he made. I was in charge of cooking steaks at a party we had and I just used some butter and Montreal steak seasoning, according to his girlfriend I changed his mind on all things seasoning and now he puts Montreal seasoning on everything. Slowly but surely, you have to teach the masses about the joys of seasoning.

I feel this. I work with a bunch of gym rats trying to eat bland ass chicken and rice all the time then they wonder why they cheat on their diets. Hung out with one of em and he saw my spice collection and just goggled. Gave bro a custom spice mix i made right in front of him and now hes in with me trying to convince the others they need some herbs and seasoning in their lives.

@Abdega 5 or 10 if you go heavy handed on em but i agree since my old post the one i helped is turning into a pretty good barbecue pitmaster. most bbq sauces will muck a diet but i put him onto southeast style mustard and vinegar rubs which have less than half the calories but tons of flavor

my favorite thing about jerk spice blend is how aromatic and varied the heat is (ginger, bay leaves, cinnamon, black pepper, scotch bonnet peppers, etc). It stimulates your entire palette instead of just giving you a ghost pepper chemical burn flavor. it's not that hard to make with a mortar and dried seasonings you'd find in most spice racks 2 parts thyme 1 part rosemary 1 ginger 1.5 salt 1.5 black pepper 1.5 onion powder 1 garlic powder 1.5 cinnamon .75 nutmeg .75 paprika lots of bay leaves 2 scotch bonnet peppers* .75 sugar (I like turbinado, but any sugar works) hardest part is the two minutes of grinding rosemary and bay leaves, then putting away all the spices *I never find scotch bonnet peppers in southern Californian markets, so I substitute with habaneros.

@@Abdega yes that's volume. Sorry if the measurements aren't that precise. I'm in the bad habit of eyeballing seasonings. Tablespoons will absolutely work (the "lots of bay leaves" would total out to 8 or ten), but you will make tons of spice blend. That'd probably be enough dry rub for six servings of chicken. It keeps well since it's dry seasonings, so making too much won't be a huge issue. I'd try teaspoons first if you're experimenting / cooking for one. Oh and I didn't mention it in the original comment but lime juice completes whatever you apply the spice mix to. Like lightly marinade chicken in some olive oil and lime juice before you apply the spice mix, or just squeeze a lime over the finished chicken when it's plated and served.

Im lucky. A local restraunt has good jerk. The heat levels toned way down but everything else is authentic. The owner may be a midwest white guy but he likes to vacation in Jamaica and learned from the locals.

@@MelBrooksKA I know "curry" isn't Caribbean exclusive it's a broad categorization for a blend of spices that varies between cultures and ethnicities. When a person from somewhere talks about curry they're talking about the curry from the place that they are from. It's fine.

People who say salt and pepper is all you need are nuts. People used to die over spices, and now people think using them is excessive. Smoked paprika is great for adding smoke flavour to stuff, turmeric is a beef flavour enhancer, oregano adds an aroma that makes my brain go THATS FOOD EAT EAT, etc

As someone who loves salmon, salt and pepper on the meat before you cook it REALLY IS all you need. Trying to be fancy with the spices is how you ruin that particular meats flavor. Every other meat though I imagine is fair game.

per McCormick: Coarse Salt, Spices (Including Black Pepper and Red Pepper), Garlic, Onion, Sunflower Oil, Natural Flavor and Extractives of Paprika. They don't list proportions, which as woolie mentioned, is super critical. Experimentation is needed

Much as I want to be a cool creative dude in the kitchen I'm a fan of pre-made spice blends. Herbes de Provence doesn't have anything particularly special in it but it's so nice to just put it on stuff and know it's gonna taste good.

Spices are dried herb blends. They're not cheating. Add a small herb plant to your kitchen with some perennial herbs and boom. You use seasoning for dry herbs and your plant for fresh ones. Your now eating better than 80% of home cooks.

the restaurant I used to work at switched from Montreal steak spice on our burgers and ribeyes to some homemade blend our new head chef with thirty years of experience made up. not one person who tasted it before liked the new shit. no one. it's a shame too because his blend was pretty good. still couldn't compete 😪

I think one of the unlisted spices in Monstreal Steak seasoning is celery seed. At least in the McCormick brand. Not sure if that's "authentic".

If I had to guess based on Woolie's description of Montreal steak seasoning. Salt pepper garlic powder Onion powder Cumin Cayenne MSG I imagine more pepper than everything else just because it's an underated flavor despite being in so much. I think I could get much closer if I actually tried it.

Never heard of Montreal Steak Spice, but now I'm curious. As for jerk spice, doesn't it tend to be a bit on the sweet side? I don't really care for sweet and spicy.

It can be (especially if you buy a ready made marinade sauce) but certainly doesn't have to be, I add a little honey to my marinade when making it but not a lot. Like all good recipes you can tailor it your way. It's more of a fruity-spicy-savory/umami wonder blend with the allspice berries, scotch bonnets, citrus and other wonderful things in there.

Sweetness is important with spicy. Its one of the two ways to control the heat. Sugar can dissolve into the spicy oils then when you eat it that way it breaks down faster, making the burn go away quicker. You kinda need it for authentic jerk since they use scotch bonnets which can be 37 times spicier than a jalapeno

For years i hated spice because EVERYONE I KNOW when using spice they basically use to take away the food taste. Then when i tried to make Curry for the first time i didn't found the peppers i needed used a random creamy halapeno sauce instead and that was the first time ever that i felt the spice actually improved the dish

I grew up with my dad using Montreal Steak Seasoning on all our steaks and porkchops. But this is the first time I've ever heard someone else talk about it. Everytime I bring it up people ask wtf is that. Hell until know I didnt even know if people in Montreal knew about it. Thought it was just one of those names people use to sound unique.

Living in Oklahoma and I have relied on Montreal Steak Spice my entire life. My dad has used it forever and I’ll use it forever.

Woolie told me I was missing a flavor on my palette by not eating jerk chicken so I went out of my way to go to the one Jamaican restaurant out of my town to try some jerk chicken

@@JackgarPrime chicken was juicy and fell off the bone. The juices from it got into the macaroni and cheese and potato halves and added a lot of extra flavor. Some of the best food I've had in a long time. Highly recommend it.

Woolie that steak spice sounds legendary 😱 Can you name drop for us non locals, the places you'd hit up for smoked meat Montreal style? Or a brand of steak spice you recommend? I hope I can find something on Amazon, that might be my only way to experience this

Montreal Steak spice is legit, and you can buy some Jerk seasoning. Just do your research before you commit to anything store bought.

wonder if that Montreal Stake Spice is better than Kurose's Spice? its sadly only available through importing, but i do NOT regret buying some. its main goal is to be the "meat flavor enhancer" spice and it does its job. its what ive wanted salt to do this whole time.

So happy I’m born, raised and live in Jamaica because oh boy, jerk chicken and jerk pork is amazing 👏🏻 even just getting a cooked lunch from a small shop is good, all of my public school lunch experiences have been good. The food here is god-tier (also we have the best KFC)

Worked with a Jamaican man in a Staples in Northern Canada. We had a break together one day and he asked if I wanted to try jerk chicken. No food has ever exploded with that much flavor before or since.

There are some stupid hot sauces out there that do genuinely taste nice (once they're done fucking your mouth with heat). But yeah, a good number are heat for heat sake.

I just make my Montreal seasoning at home that way I get that little bit extra, but I can use the nice big kosher salt flakes and I can crack the helper fresh which just puts it over.

Montreal steak seasoning is one of my go to spices for grilling. If it's not on the grill it just doesn't pop. And I love about any hot sauce as long as it doesn't have capsaicin extract in it. That brings any sauce way way down in quality.
