We all go through that phase once we first try it. If you want something truly next level, take frozen Perogies, boil them for just long enough for them to soften, season them with Montreal Steak spice, then swap to a pan and oil fry until crispy. If you want a dip add 4 tbspns of sour cream to roughly 1/2- 1 tspn paprika and chilli powder then just a squeeze of lime. You could sell this shit in resteraunts im telling ya.

I have a friend who's a super picky eater and like refused to properly season any of the food he made. I was in charge of cooking steaks at a party we had and I just used some butter and Montreal steak seasoning, according to his girlfriend I changed his mind on all things seasoning and now he puts Montreal seasoning on everything. Hung out with one of em and he saw my spice collection and just goggled. my favorite thing about jerk spice blend is how aromatic and varied the heat is (ginger, bay leaves, cinnamon, black pepper, scotch bonnet peppers, etc). It stimulates your entire palette instead of just giving you a ghost pepper chemical burn flavor. it's not that hard to make with a mortar and dried seasonings you'd find in most spice racks 2 parts thyme 1 part rosemary 1 ginger 1.5 salt 1.5 black pepper 1.5 onion powder 1 garlic powder 1.5 cinnamon .75 nutmeg .75 paprika lots of bay leaves 2 scotch bonnet peppers* .75 sugar (I like turbinado, but any sugar works) hardest part is the two minutes of grinding rosemary and bay leaves, then putting away all the spices *I never find scotch bonnet peppers in southern Californian markets, so I substitute with habaneros.

@@Abdega yes that's volume. Sorry if the measurements aren't that precise. I'm in the bad habit of eyeballing seasonings. Tablespoons will absolutely work (the "lots of bay leaves" would total out to 8 or ten), but you will make tons of spice blend. That'd probably be enough dry rub for six servings of chicken. It keeps well since it's dry seasonings, so making too much won't be a huge issue. I'd try teaspoons first if you're experimenting / cooking for one. Oh and I didn't mention it in the original comment but lime juice completes whatever you apply the spice mix to. Like lightly marinade chicken in some olive oil and lime juice before you apply the spice mix, or just squeeze a lime over the finished chicken when it's plated and served.

Spices are dried herb blends. They're not cheating. Add a small herb plant to your kitchen with some perennial herbs and boom. You use seasoning for dry herbs and your plant for fresh ones. Your now eating better than 80% of home cooks.

It can be (especially if you buy a ready made marinade sauce) but certainly doesn't have to be, I add a little honey to my marinade when making it but not a lot. Like all good recipes you can tailor it your way. It's more of a fruity-spicy-savory/umami wonder blend with the allspice berries, scotch bonnets, citrus and other wonderful things in there.

Sweetness is important with spicy. Its one of the two ways to control the heat. Sugar can dissolve into the spicy oils then when you eat it that way it breaks down faster, making the burn go away quicker. You kinda need it for authentic jerk since they use scotch bonnets which can be 37 times spicier than a jalapeno

So happy I’m born, raised and live in Jamaica because oh boy, jerk chicken and jerk pork is amazing 👏🏻 even just getting a cooked lunch from a small shop is good, all of my public school lunch experiences have been good. The food here is god-tier (also we have the best KFC)

Worked with a Jamaican man in a Staples in Northern Canada. We had a break together one day and he asked if I wanted to try jerk chicken. No food has ever exploded with that much flavor before or since.

I hate buffalo wings they just taste like chili powder, but I'll suffer for some spicy honey BBQ wings, and anything jalapeno flavored like chips.

There are some stupid hot sauces out there that do genuinely taste nice (once they're done fucking your mouth with heat). But yeah, a good number are heat for heat sake.

I just make my Montreal seasoning at home that way I get that little bit extra, but I can use the nice big kosher salt flakes and I can crack the helper fresh which just puts it over.

Montreal steak seasoning is one of my go to spices for grilling. If it's not on the grill it just doesn't pop. And I love about any hot sauce as long as it doesn't have capsaicin extract in it. That brings any sauce way way down in quality.
