Bro this looks like a really chill version of deep dip, the TrackMania map that was hyped by wirtual, you could try to make a tournament similar to what they had on TrackMania, no checkpoints, live stream your attempts, and the first one to complete the map gets a prize, you're basically the wirtual of beamng so it makes sense to try something like that

if anyone else tries this and gets one wheel stuck off the ground with an open diff, try applying a little parking brake as you apply throttle. mapping it to an analog input is ideal, rapidly toggling it on and off can work. sometimes regular brakes can do the trick, even. the idea is to put a little resistance on the free spinning wheel, which allows some torque to transmit through the wheel with traction. not a substitute for a proper limited slip diff, but can be enough to get you out of a bind. only applies to rear wheel drive vehicles, since the parking brake only engages the rear brakes.
