One source of the huge demand are countless recipes that call for EVOO even when using it is both wasteful and inappropriate. The highest quality oil is best used as a condiment or, as with pesto, when it will not be heated. Heating drives off the components that give the oil its flavor and aroma. Using EVOO to sauté is throwing money away.

This video failed to inform us in any useful way. The rest of the shit mentioned, most people already know. I go by the refrigerator cloudiness test and the swirl in a bowl test. True EVOO doesn't leave an oily patch on a bowl. It rinses off smooth. If it's mixed with a lower grade oil, it will not act this smooth.

I live in Croatia that produces high quality extra virgin olive oils traditionally on all the islands and coasts. Prices of a reall EVOO here are 12 to 14 $ per liter. It's high for our incomes! The second problem is that there is allways shortage of them on the market. Every single year the producers are complaining about the bad cropts due to diseases of the olives or due a bad weather conditions of the year, so the prices could rise again. There is an issue of taste also. Not many people understands that there are many different sorts of olives that gives different tastes of EVOO. Once I was at the Island called Shipan and, before I was back to a continent, I purches 5 liters of their EVOO. Suprisingly, the taste of it was awfull, very bitter and without any fruity flavour. That's because of two reasons: first, they have their own sort of olive, very small and bitter ones and the second, they don't grow any lemons and oranges close to olives on entire island. Fruity flavour comes from polination of the flowers by bees which are polinate lemons, oranges and olives at the same time. Of course, we used it anyway because it was a real deal and pure as can be, so health benefits was all there, but the taste was bitter as hell. Nowadays, with inflation and higher prices, we have to ignore the best quality of our own EVOO, so we also purches cheaper imported ones from a big markets, hoping that they are not lying, but they all writes on their labels Extra Virgin Olive Oil from the first cold press. I dispise capitalism for allowing lying at the labels, when we lived in socialism that was not allowed and yes, we didn't have so many options, but the food was exactly as claimed. That was a time of honesty and a conditions for the people. Also, when you went to retire, you could live forward with dignity while todays retirees are digging through the garbadge to find something to eat or to sell. Sad, sad times, every capitalistic lie costs not only us, human beings, but the whole nature too. Humans are so stupid.

EVOO (cold-pressed) is what we want. 6 Tips for Recognizing Real EVOO How do we know if our oil is the real thing and not part of the olive oil fraud? 1. Do not buy light olive oil or a blend; it isn’t virgin quality. 2. When EVOO costs less than $10 a liter it may not be authentic oil. 3. Real oils are sold in dark bottles, as this protects the oil from oxidation. Look for that. 4. Look for a seal from the International Olive Oil Council (IOC) 5. Look for a harvesting date on the label. 6. It can get old and rancid. A simple test for a good oil is to taste a little on a spoon. Not rancid, the real oil will have a fruity taste in the front of your mouth and a peppery taste in the back of your mouth. Then you know it is not a fake olive oil.
