I love this video. My family produces olive oil for personal consumptions (Palestine) and I always laughed at high end chefs pouring what seems to be triple filtered bleached half a year old oil and call it "Extra Virgin". They have no idea what extra virgin olive oil is! Me personally I love unfiltered extra virgin olive oil. Right from the fruit from the first press as is. This kind of oil has the best flavor ever. Fun fact, we have a generic term to describe some old olive trees locally as "Romanya" (Roman). Not because the Romans brought it, but because the tree was there during when the Roman empire took over the land! Some old trees those are.

Wonderful presentation and production about olives and olive oil! I returned from Corsica and learned that the Greeks travelled the Mediterranean and planted olive trees as they travelled. Wild olive trees were present in Corsica but with small fruits.

I’m a Brit living in Andalucia, Spain. I was always lead to believe that Italian olive oil is the best in the world. Little did I know this is untrue and it’s all because of marketing that gave the lie that Italian was the best. Something like the Audi car. More style than substance. In the world competition for best olive oil, Spain and in particular the Jaén region is the best in the world. Out of the hundred best olive oils in the world, Spain had over 90% of the best and the top 9 in the world. We have 12 very mature olive trees on our land and press our own cold extra virgin olive oil. We think is the best in the world but we are biased!

My dad was an American soldier who was seriously injured fighting in Germany in WWII. They sent him to the south of France to be a company clerk because he really could not be in combat anymore. He talked of standing in the south of France and pulling olives off of branches (and eating them) from trees growing in Monaco (off limits to US soldiers in WWII). He never tasted olives before being in the war, but loved them the rest of his life.

I hope he wasn't eating it right off of the tree, not a single person on this planet does that, because they are incredibly bitter and first need to go through a process of removing that bitterness and/or flavouring. The extra virgin oil extracted from them is another thing, it gets a rounded flavour from that bitterness.

I now live in southern Spain and am in my fourth week of curing olives that I have foraged from roadside trees in my area, basically rogue olive trees. This is my first try at it. Great video. We pick our own olives here on Hvar island in Croatia. It is exactly the same process but just a much smaller scale. This year we picked 280kg of fruit from the 14 trees we maintain and got about 30 liters. Fresh oil is the best!

A real treat of a video. First watched your 5 tips. Then went on Amazon and bought a fresh bottle. Mine expired 2 weeks ago, as did, turns out, my lemon juice. Planning on incorporating a tablespoon a day on an empty stomach for overall health benefits, heart, cholesterol, brain/anti-dementia potential aid, anti diabetes et al. Meh. I don't think it can hurt unless there is some underlying rare health disorder with the oils. Ever heard of Lorenzo's Oil..the film? Should see that!! Olive oil IS medicinal for sure.. as you said very well. Thanks again.

Unfortunately we are not very good at marketing....congrats again to Nicole and the team for this great video

South of Jaen, we had a storm the other night, and the wind floored most of my avocados. I took a large bag to Örgiva, and exchanged it for some fresh olive oil, which I´ve just tried, on a lump of local bread. Olive oil has a shelf life of two years, and the oil in the supermarkets is always a year old -- this was my first experience of fresh olive oil and it was very light and fragrant, with a lovely smooth taste. Olive trees need pruning regularly, keeping up with my dozen trees is enough for me, the sight of those acres of olives is a bit daunting. Saludos desde Las Alpujarra.

You ought to receive a PhD in olive oil as well as presentation skills that keep us listening with intrest and personally fascinated with the kind of information that you provide. My grandfather had olive groves in sounthern Italy until the early 1900's Thank you

I think how productors filter the oil makes a big impact too. I am from Jaén (where she was) and I tried olive oil from Morocco and it was totally different. It had small bits inside and tasted more raw in a way because it was filtered less (I was told). It's another interesting way to make it your own way

I love this channel so much, it literally feeds us with information we didn't even know that exist, and I love Nicole ! She's full of life, the way she presents and her enthusiasm, aaaaahhhhh..... I know a little about this. I had family in the olive oil business. I’ve had the opportunity to run the olive harvester and also ran the press for 2 seasons. So I’ve seen the entire process from tree to bottle. You might be shocked on how violent the harvesting is. Sometimes the harvester will rip the entire tree out of the ground. It’s also amazing to me that some people will come from across the globe to be there for olive oil pressing. And olive oil fresh out of the press is pretty amazing. It has a bite to it.

By far the most beautiful and educational movie I have seen on youtube about how olives are harvested and olive oil is produced in my opinion. My father was born 80km to the east of Ubeda (province of Jaen), where this movie is shot, which is more mountainous therefore more labor intensive to harvest; resulting in even higher quality of extra virgin olive oil. Living in The Netherlands myself, I have started to import olive oil, to share this healthy product. Thank you for this great documentary!

My family grew olives on the Adriatic Coast in Abruzzo, this presentation was informative, well presented and beautifully shot! Not to mention the feeling of longing for ancestral connection. Well done Nicole !
