Alain inherited his father's laughter but also his uncle's features. Michel Jnr. has the delicate tone of his dad but his uncle's inquisitiveness, mannerisms and stature along with his gift for story-telling. There is a very satisfying symmetry and anti-symmetry in the relationship between the fathers and the sons, but also the same banter.

Wonderful to find these programmes again. I was newly married when the series was first broadcast and this series became a cookery course that taught me the basic skills that I have used throughout the decades that followed. I still have and use the book that came out alongside the series. With these basic techniques mastered one can attempt so very many different styles of recipe and cuisine. Just sorry that we were never in a position to eat at any of the Roux brother’s restaurants. One day we will get to the Gavroche.

How refreshing to see this again and watch the chefs actually COOK in a civilised fashion, as compared to the likes of GR, the loud music and the fff-ing in your face all the time. I know which one I prefer.

It is much better. However I don't think GR is at fault. It's the producers of the shows who "require" that, assuming that's what we, the idiots, want. As for demeanor in the kitchen, the Roux brothers were rough on Marco, which then was tough on Gordon, which then was tough .. and so on. Don't let their calm demeanor fool you, while in service, they'd bite your head off.

These guys are the masters of this field. Ramsay etc are all excellent masters too but these men are the founding fathers for our era....they are like Monet to Impressionism, Cezanne to Post Impressionism, Van Gogh to Post Impressionism/Expressionism.....make no mistake about these experts and how they have been favoured with this global and historical contribution.

As far as I understand they basically transformed the UK from food hell to a country that can rival any other with its cuisine. To me a greater accomplishment than any 3 michelin star award....to transform a whole country's food culture is like a 4th star. It's a joke that Michel Roux Jr has only 2 stars let me tell you.

I stumbled upon this video by accident, after seeing Gordon Ramsay poach an egg. And wow, I thought this would be like a bad episode of foreign-dubbed Sesame Street. Turns out these guys seem like the coolest goddamn chefs in the worlds. Their personality is so perfect for a nice TV show.

thats cause this is two brothers during a non live cooking only show. and grs shows are mostly reality. the roux brothers and jr. both run a very serious kitchen, and at the cost of their food (during both time periods) "f" ups are NOT tolerated and are treated just as so. but honestly as a customer, if you don't see any of the turmoil, and both come out just as well done. why the hell would anyone care?

An improved version, IMO, of Julia Child's show. Still, the classic French way of doing things, but with refinement and less fidgeting about than Julia. Nothing against Julia of course, she, or pretty much most of 20th century cooks have nothing on the Roux brothers. Quite literally, they were some of the responsible of defining the French cuisine we all know today.

Correct, Albert's son Michel jnr is at the helm, and from what I understand his style of cooking doesn't suit Michelin's 3 star requirements. The restaurant is still very well thought of however.

The bain marie makes it idiot proof basically. But you can use direct heat as long as you take your pan off the heat for a few seconds every now and then to prevent cooking too aggressively.
