Hi Marion! I’m Vietnamese, married to a Dutch/German Caucasian man. He doesn’t eat Vietnamese food (sad, but I love him regardless), and I adore Viet food. This looks absolutely yummy! I can’t wait to make it. I live in Southern California and there are many Viet supermarkets 1/2 hour north of us. Will shop for the ingredients to make soon. Btw, I started to binge watch your other videos and am loving all your recipes thus far. I looked for your cookbook, but I can’t find it anywhere. Suggestions? Thanks. Lastly, just found out your birthday is 9/29! So is mine, but 1974. Blessings from the US!

Soy sauce, but it's more salty though, so use less

Although fish sauce has a unique flavor profile and there is no substitute, you can add a touch of tamarind paste and a little soy sauce. The Spruce Eats says that 'tamarind has a "complex flavor profile," especially when it's concentrated. It's sweet but sour, citrus-y but peppered with notes of "smoke and caramel." so it will add more complexity and mystery than soy sauce alone.

What is the name of the mild red chillies you use? I've googled "red chillies" and so many different kinds come up ! Help!

They look like Thai red chili’s or “Birds eye chili”, we usually use this chili in Southeastern dishes. :)

@@potato-chan498 they aren’t birds eye. Those are really small and spicy. The chillies she often uses are mild and she’ll use them in combination with birds eye

@@aprilreads1304 Yeah, those are definitely not birds-eye or Thai chiles as those are hot. Marian said the chilies she uses are not hot. I wonder if they are Korean peppers.

They're called chili horns or horn peppers. Most Asian grocery stores sell them if you have one nearby. You can also buy seeds to grow yourself so just google it. There are multiple varieties with cow horn and goat horn peppers being the most popular. Goat horn peppers are a little milder but this variety of peppers are not very spicy anyway.

Good techniques, the primitive way. I wonder if the food processor can change the texture and taste? 🤔
