I was shocked to learn that Mr. Kimball and the suits at parent company Boston Common Press couldn't come to an agreement on his compensation. Episodes of the TV programs that have already been taped will still be shown, but very shortly we won't be seeing him anymore. It makes me sad to see the end of an era. My only problem with sous-vide is the extra wastes you generate from all the bags.

+Anh Triệu -- I reuse my bags. I often use Ziploc bags, and when I do use heat-seal bags, I make them longer than needed so I can cut open the seal and still have enough room for several more seals before I have to toss them. I also use glass jars filled with oil or marinade when that's appropriate, and of course those are fully reusable.

Does meat brown just as well in a non-stick pan as it does in a stainless steal pan?

Yay Chris! Loved the whole thing but the last comment about the dry white meat turkey and why god invented gravy are words to live by. My favorite part of a turkey dinner which we have at least four times a year.

It's funny how this guy tries to play like he's an idiot on the show, but if you're observant, you can tell he's super smart on food science, even before seeing this.

Buddy Bellwether He acts like he can't cook his way out of a paper bag. It's the typical lead in to each segment, presenting his "bad" effort.

I used to like him more than I like after seeing this, I still like him but he came down a few notches.
