Pretty rad, I looooove tamales. My favorite is shredded beef & I think I only had the red & the white kind. It's what the stores have had for store-bought. & had red, & white, with shredded beef at Mexican restaurants. I might have some things messed up... This is my knowledge on tamales so far.

I’ve made tamales for many years. You have helped me with many small issues I’ve had. Your suggestions ,such as how long to mix the masa and the masa floating, has helped me to know the right consistency for the masa. Very detailed and am excited to try your instructions this year.

So a couple of things. 1) I hit the jackpot when I found your channel. I have been cooking for the family and they love all the recipes. 2) your kitchen is so clean...like I make a grilled cheese sandwich and 10 seconds later it is a mess 3) When I make tamales, I look like I'm a tamal cuz I'd have masa all over Hope you and the family are blessed, I can't wait to try this recipe

I made tamales on Sunday I did them from your old recipe and girl let me tell you… everyone loved them I made 15 lbs of masa and all the tamales 🫔 were gone except for 5 that were left for me lol. Thank you so much for sharing your recipes ❤😊

This may sound crazy but my neighbor years ago. His mother combined her families tamale recipe with his dad’s families curry recipe and it was so flavorful, I’ve never had green Chile tamales tho so I am excited to try this! Thank you for sharing.

You made those perfectly, some people make the masa too thick so it can spread easier but it taste dry. Your tamales looked moist and fluffy!!!

U make it look so easy!!! 😂 Tamales at my sister’s house always turns into a whirlwind. All my tias make an assembly line and talk about how I’m still not married. 😂 However, the result is always worth it. The tamales come out so delicious! Especially los verdes. I’m just gonna throw an idea out, though: the day after. I hate microwaving them so I add a little teeny, tiny bit of salsa to a pan and then fry the tamales without the husk. SO GOOD!!! They release the perfect amount of the lard to cook the tamales and it comes out perfect.

I use my insta pot to cook the tamales. Done in 40 minutes. Will try 30 minutes next time to see if masa separates from husk. Didn't know about whipping the masa till it floats. Thanks for that tip! Definitely going to do that too.

As a new mom, I thought it was time to step up and make my own tamales after countless years of my own mom making them every holiday. I am proud to say they were so successful! My SO who doesn't particularly enjoy tamales said they were good! This recipe is definitely a keeper.

So extremely happy about Autum being here this is my most favorite season of the whole year I like falling winter where it's cold and you get to Cozy up and wear sweaters and rain boots but here in California we haven't got no rain so it kind of sucks because we're all hot through this winter but neither way I like it because football season's here I need to get those gloomy days with ugly out and overcast and you get to make soups and stews and cookies and pies and cakes and all that other good stuff in your house smells good so yes I'm excited for the season love you muneca face......

I have been making pumpkin rolls for about 30 years. they are really easy and very good. the roulade can be made in made jn many flavors with different fillings.

Haven't searched all your videos yet but have you tried making the sweet tamales? My mom would make Pina, Fresa, and Frijol. Never had green chile tamales as her and my dad would always make red pork tamales, their traditional way (no raisins LOL!). 👍

Hi Claudia, My family is uneasy about cooking with lard, but I want to try your recipe. Is there any substitutions you’d suggest? P.S I love your videos and the food you share. You are of my favorite channels to watch.

Vegetable shortening is a good replacement for Lard. However, I'm not sure how it will affect the texture for tamales. There is really nothing like lard for tamales!

There is nothing weird with cooking with lard if you already eat pork, and it's much healthier than crisco. It bakes and fries beautifully, no 'porky' flavor at all.
