I warm up the coconut oil and pour it into ice cube trays and add the salt to each one. I put them into the freezer until solid then I dump them out into a ziplock bag and keep them in the freezer. Very convenient and consistent.

A correction: Gold Medal Products does not make "Gold Medal Flour." "Gold Medal Flour" is a brand of General Mills. Gold Medal Products, the makers of Flavacol and other concessions supplies, is a separate and unrelated company.

@@realforgedinsteel Not really, because they're not the same kind of products. A flour mill is not likely equipped to make popcorn salt. And Gold Medal Products isn't a small business; they have their own factories and distribution network throughout the USA. But they don't market stuff to the average consumer; they serve the concession industry. Otherwise, one of the very few retail outlets for their products is Amazon. What that all means is that they likely don't need outside help to meet their demand. And the original mistake was, because the company that makes Flavacol shares the name of a brand of flour, that both must be related. But they aren't.

While I agree on the products you are using, especially the flavacol, coconut oil and kernels, the popcorn maker DOES matter. I was given a cheaper Nostalgia popcorn maker similar to yours as a gift by my wife, and could not believe how much better it was than microwave popcorn. In the past I have tried those cheaper air poppers and other toy gimmicks and as I opened it thought it would be fun, while the responsible side thought it would be a waste of money and space, but the taste started to rival theaters. Unfortunately, it failed after a number of years only after turning from a want to a need, and since I could not get the parts to repair it, I looked for a new unit. This time in between having a working unit is when I discovered one secret to movie theaters and why you were wrong in terms of the appliance not being a big factor. At the time I used the All in One 8oz packages, with Mega-Pop being my favorite, so I tried to use the pot method on the stove with the same all in one packages only to find the taste was somehow different, with another big factor that the popcorn was nowhere as light, seemingly retaining the steam and severely impacting the texture and taste. I can’t explain why the taste was so different, maybe that the large pot’s surface wasted the salt, so it did not adhere, but it is clear the steam altered the texture and even placing in the oven after popping would not solve the issue. Regardless, this surprised me as I like you thought it was just a matter of finding the right ingredients. Anyway, I decided to get a better unit per the design issues with my Nostalgia (like yours shown at 5:06). The Nostalgia unit had a smaller kettle, with just a thin stainless cooking surface of uneven heat, but the major issue in the lid was poorly designed. Like yours, it had two separate lids with a hinge that would allow the popcorn to escape. But also like yours it would often recoil from the popping action and stay open, which not only created a loss of 25% to 50% of unpopped kernels, it would also spatter oil and the salt everywhere, rendering an inconsistent product in taste and creating a mess of the windows, top and doors on the popcorn maker. I tried weighting the lid, bending it and incorporating a stop, but it was just a hassle and never worked well. But even with these shortcomings, the popcorn was better than stove top, or any other gimmicks I mentioned that either affords no taste, and steam all but ruins the product. So, now that I learned I can no longer live without a machine, the natural progression was to get a high quality unit. I purchased a Paragon Theater Pop 6, which is an excellent unit. It has a larger kettle, with a thicker/nicer non stick cooking surface, and a single lid that is pushed strait up as the amount of popped corn forces it. So, it does not pop up by the kernel popping action, and will not stay open like the Nostalgia/yours. So now, all ingredients remain in the kettle and are applied to the popcorn, and unpopped kernels are almost nonexistent, with a guess of 3% or less waste. VERY efficient and I am sure you can attest to the severe loss of kernels in your unit. You can even start to see them as you are moving the popcorn around with the scoop. Add to that you can remove the stirring component for easy cleaning, all sides/back are glass rather than plexiglass. It has a heat lamp, but also a warming element under the deck to keep the popcorn warm. I will often close the doors and let the popcorn sit for 10-15 minutes which allows the last of the steam to escape the popped kernels and it does help. It is very consistent in taste, and is on year 8 without a hiccup. My only complaints are with such a quality unit, it came with a plastic scoop, and the doors are thin plexiglass. This is surprising given the high quality of the remaining components including unpopped kernel tray is excellent, and the unit still looks new even after being used 4-8 times a month. I even bought the base in recent years since I moved and no longer had the large counter in our utility room. The base is disappointing as the build is not great with wobbly wheels, but it does look nice and would look excellent in a theater room or den. Anyway, good video and it should be helpful to those who want to step up their game. I will not speak against getting a lower end unit like the Nastalgia because if it is the difference between getting in the game, or sitting on the sidelines, then by all means buy one. I served me for years and even with the frustrations with the lid/kettle, gave far better results than the smaller toy gimmicks, microwave and stove top. But if you can afford it, I do recommend a higher end unit as it will provide a more consistent and better product, but also much easier to clean. It looks better too, but that would make me shallow…

A few years ago I used to work at a movie theater and the amount of oil used to pop a batch was predetermined and controlled by a button. Occasionally I'd hit the button twice to add extra oil, personally to me it made the popcorn taste even better. So one night I figured "well shit, if pressing it twice makes the popcorn taste even better why not press it 3 times?". Needless to say I burned the entire batch and spent the next hour scraping and cleaning it out lol. Our poppers were huge and would pop about 4-5 times the amount of seed as this popper at a time so my manager wasn't too happy an entire batch went down the shitter.

the orange coconut oil is just dye w/ beta carotene, it adds no flavor just color. you can use regular coconut oil for the same taste. alternatively, ghee is good in lieu of butter as the milk solids can burn and give a bad taste. ghee has those solids removed and so it'll still give the buttery flavor without the risk of ruining a batch with the burnt butter taste, however if what you're doing works fine for you then right on!
