They probably turn brown from too much water, which saturates the roots and kills them. There are other plants that have that problem too. If I remember correctly, the Orchid is one such plant.

If you let your broccoli plants go to flower, you'll attract honeybees for miles around, and the bees will pollinate the rest of your garden quite happily. (If you want to attract bumblebees, plant lavender.)
