If you've never worked in a restaurant you'll never understand the importance of family meal. During college sometimes this was my only meal or main meal of the day.

unless you work at a joint where everybody clocks in, does their prep, does the rush, cleans up and clocks out. I'm seeing more and more of those and it's infuriating. Then you get to the point where managers ban shift meals because why let your staff have free food when they're already making $9 an hour? Why, that's a waste of product! Anyway I'll get off my soapbox. I just hope people will stop working for these places and instead wait for jobs with real solid management

Family meal is special cause your chef is cooking for his people, it's a lot more personal than a random face. Remember to always thank your chef after he cooks

This is exactly how our staff eats. Our family meal is after service. Chef is right same doesn't matter the cuisine. Unfortunately pandemic has prevented us from sitting together. 😢

Worked in Americans restaurant s for 20 years this is a unikorn of a restaurant. There's no time in today's industry for this.

something crazy, like 1-3 if i remember correctly. they were honest about charging for labor cost though, and with more and more michelin stars people were happy to pay

If you are a cooking geek aka an actual chef who wants to know almost everything you can. You can't help but to talk only on food. You are practically surrounded with people with so much knowledge and you just can't help it. It's like gathering with book lovers and all you talke is the characters. per se

My problem with makin staff food is that i only have 2 months experience and Im left to work alone and I have to get my prep done after servicr ans everything is expected to be spotless clean and at the same time I need to waste my time on staff food if anyone could give me examples in the comments on food i could make really quick for staff would be good

Staff meal does not need to be luxurious. Roast some chicken, potatoes, veggies and there you go. Make some beans or pasta. It's really simple. You don't really need to complicate. As Rene himself said, staff meal has to be delicious, w/e you serve it's your choice

I really liked the video when I first saw it, but looking at it years later, it seems this had turned into another high pressure situation where the staff have to perform and be judged.

Slave driver just announced he is closing in 24 after admitting to not being able to maintain a viable restaurant. Blacklists exist for cooks who call out once and half the staff were never paid.

Because this is a single course, guests eat several courses, if they had a large filling meal they could only eat 1 dish.

How many of this staff was paid any money while working there under his 18 hour shifts, enduring mental and physical abuse? 50%? Rene is the classic "the emporer has no clothes". He is 100% ego and good PR. His diners are an elite cult of conspicuous consumption. I am hoping he will never profit from this type of "dining experience" in the future now that some of the foodie cult are finding out that ne is an abusive employer/user of his chefs who work for NO MONEY!!!!!

They don't wear hair caps, yet a lot of them have long hair, I don't think their food is as clean as people may think. they're sometimes not wearing gloves which can be okay, but the hair is defiantly a no go.
